Instant Pot Sausage Potato Spinach Soup

“This insanely flavorful Sausage Potato Spinach Soup recipe is made in the Instant pot and is packed full of sausage, potatoes, onions, mushrooms, beans and spinach! When you want a hearty, healthy soup, this one is it!”

MADE IN A PINCH

– pork sausage (all flavors are delicious!) – olive oil – onion, diced – yellow bell pepper,(optional) – mushrooms, chopped – canned white beans (I used great northern beans) – reduced-sodium chicken broth – water – russet potatoes, chopped and peeled – Worcestershire sauce – garlic powder – Italian seasoning – crushed red pepper flakes (optional) – spinach

Ingredients

1. Turn your Instant Pot to Sauté mode. Once hot, add your sausage, oil, onion, bell pepper, and mushrooms. Stir and cook until cooked; about 3-5 minutes.

COOK SAUSAGE & VEG

2.  Add in your remaining ingredients except for the spinach to your Instant Pot.

ADD THE REMAINING INGREDIENTS

3. Close the lid. Close the valve and set your IP to High Pressure for 10 minutes.

COOK

4. Once the 10 minutes is complete, do a quick release.

QUICK RELEASE

5.  Remove the lid and add in your spinach. Stir.

ADD SPINACH

6. Serve in your favorite soup bowl!
