“I created this particular soup after Thanksgiving, as a way to get rid of some of the leftovers we had. Say hello to Turkey Rice Soup! I was delighted when this soup quickly became a family favorite on the first try!"

MADE IN A PINCH

– chicken stock – celery – carrots – mushrooms – onions – cooked turkey – water – salt – pepper – Old Bay seasoning – Thyme – garlic, minced – white rice – fresh spinach, roughly chopped optional

1. Add all ingredients (minus the rice and spinach) to your 6 qt slow cooker.

2. Cook in slow cooker on low for 6-8 hours, or on high for 4-5 hours.

3. About 2 hours before end of cook time, add the rice and spinach to the soup. Continue cooking until end of cook time..
