Chicken-in-the-oven

I ask my mom to make this for me for my birthday every year.  (My birthday is in November and this dish is perfect for colder weather.)  My mom always makes homemade mashed potatoes and butter beans as sides, so the sauce can be poured on top of the ‘mashies’.

Cut up a whole chicken or prepare your preferred cut of chicken.  Preheat oven to 350 degrees.

Put the following into a casserole dish and stir together.  My kids do this:

1 cup ketchup
1/2 cup French’s creamy dressing
1/4 cup apple cider vinegar
1/2 cup water
2 patties butter
red pepper flakes – optional.  I add this to the adult plates after cooking

Add chicken to sauce and rotate so chicken is covered.  Cover dish with aluminum foil and bake at 350 degrees for 40 minutes.  Rotate chicken  a few times while cooking.  Take off aluminum foil, cook another 15 minutes to brown the chicken a little.

Serve with mashed potatoes and butter beans.
