Preheat oven to 350 degrees. Grease 6 mini bread loaf pans.
In a large bowl, mix together pumpkin puree, eggs, oil, applesauce, water, and sugar until well blended.
In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger.
Stir the dry ingredients into the pumpkin mixture just until blended. Pour batter mixture into the prepared loaf pans.
Bake for about 40 minutes, rotating 180 degrees halfway through baking. The loaves are done baking once a toothpick (or cake tester) inserted in the center of the loaf comes out clean.
