As a busy mom of three active boys, I am always on the hunt for easy and quick weeknight meals.  I’m talking 30 minutes or less of work time.  Cooking time doesn’t bother me – if it’s in the slow cooker and I don’t have to stand by the stove keeping a close eye on it!

If I’m really honest, I resisted having and using a slow cooker for years.  I have no idea why – fear that it might burn the food?  However, now it’s one of my absolute favorite kitchen tools!  I use mine often now, so it makes me chuckle to think of how resistant I used to be.

This is my absolute favorite slow cooker! It’s wonderful because you can program how high and how long you want to cook your food.  My favorite feature is the locking lid so that you can take the crock pot (full of food but doesn’t spill!) to a relative’s house, a friend’s house, a pot luck, a teacher appreciation dinner or anywhere else you need to take it! It really is worth every penny (and makes a terrific birthday or holiday gift!).

This tangy barbeque chicken is perfect!  It takes only 5 minutes to whip together the ingredients and turn on the slow cooker.  Shredding the chicken takes about 10 minutes (or less).  There you have it…a delicious meal with very minimal work!

This chicken dish is perfect for those busy sports and activity nights.  You know, those nights when you’re just running and need to grab something quick but don’t want fast food.

My family absolutely loves this chicken!  We will eat it plain with rice or noodles occasionally, but we really love it on top of a baked potato.  If you really want to get crazy, throw some shredded cheddar cheese on top – it’s simply amazing!

  15. I’d appreciate the little food processor the most. I have one – well, had one – it really doesn’t work any more and is actually an attachment to a much larger appliance, so having one that is compact and that actually works would be a godsend.

  24. Thanks for sharing this recipe! Just in time for my planning! 🙂

  25. This looks delicious. Is there a way though, to prepare without a slow cooker. I don’t have one and I’m not sure those are sold here in Norway. I am going to pin this for later. Thanks Heather!

    • Hi Nicole! Yes! Think of the slow cooker as a mini portable oven. Almost anything you cook in the slow cooker can be baked in the oven. So if you want to try baking it, turn your oven to 350 degrees and bake, covered, for 60-90 minutes (until the chicken is cooked). Then take out the chicken, shred it, and put it back into the sauce.

  26. The Food Processor

  27. We have a slow cooker but I do not use it as often as I should. I like this recipe but I am so impatient to have to wait for 4 hours. I think this would be great to make on a weekend when I have more time. Looks delish!

    • Hi Sheri! Well, you can either make it on the weekend and have it for the week (meal planning – score!) or you could bake it if you want it a little faster. If you want to bake it in the oven, bake it, covered, at 350 degrees for about 60-90 minutes (until the chicken is cooked). Then take it out and shred it and put it back in the sauce. Voila!

  28. That looks delicious! This time of year we eat out of the slow cooker so much because of all the practices we have! This is going on the meal prep calendar! Thanks for sharing!

  30. Looks delicious. I ADORE my slow-cooker and always have, so I’m always surprised to hear people who don’t like using it. I’m glad you’ve come over to the good side. 😉 It’s such a time saver. The homemade barbecue sauce sounds amazing!

  32. Oh man that goods good. Much better than BBQ Chicken in a tub you buy at the grocery store.

  33. Yum! Love the crockpot and BBQ chicken. I pinned this for later!

  34. The locking lid would be a cool edition to a good slow cooker. I have tried them and have had mixed results with slow cooker food. I never hated it, but I never loved it much either. Not sure why. This does look delicious though. I would love to try this recipe out.

    • The locking lid is a terrific addition to the slow cooker – it makes transportation to potlucks, teacher appreciation events, etc so much easier! I think the key to using a slow cooker is to use it for dishes that you won’t need/want a crispy texture. Saucy recipes like this one, soups, pastas, etc really do well in the slow cooker and save oodles of time!

  35. This looks to be a great recipe, sadly I’m a vegetarian so I cannot try it as it is. Maybe, I can try with some vegetarian substitute. Thanks for sharing. 🙂

  36. Thank-you, thank-you! For the longest time, I was a single mom without a BBQ, so I’m thrilled for recipes like this one that gave me the opportunity to fake it. Love crockpot recipes, especially on days we’re busy. They make life so much easier. I’ll let you know how it turns out. Hopefully, my three-year-old grandson (who used to love chicken and has suddenly become picky about it, turning up his nose to the Asian style I made last week) will love it as well. Thanks (as always) for your wonderful recipes! x

    • Oh Ali, thank you for the amazing comment and sweet words. I hope you love this recipe as much as we do. Simple is how we do things – life is already too complicated! I hope your grandson loves this! My one son who has texture issues even loves it!
