Turkey Sweet Potato Chili With Apples

– olive oil – sweet potato – onion – minced garlic – chili powder – ground cumin – smoked paprika – salt – water – canned black beans – canned dark red kidney beans – canned diced tomatoes – lime juice – Granny Smith apple – Turkey Polska Kielbasa

1. Heat the olive oil in a large pot over medium-high heat. Add the sweet potato and onion, and cook about 3-4 minutes, or until the onion begins to soften and sweat.

2. Pour half of the lime juice over the diced apples to keep them from turning brown.

3.. Add the minced garlic, chili powder, cumin, smoked paprika, and salt. Cook for 30 seconds, stirring constantly.

4. Add the water, and bring it to a simmer. Cover, and reduce the heat to medium-low. Continue simmering for 10 minutes, or until the sweet potatoes are tender.

5. Meanwhile, heat a large skillet pan over medium-high heat. Add the turkey kielbasa to the pan. Cook 5 minutes, stirring constantly, until the turkey is lightly browned on each side. Set aside.

6. Add the black beans, kidney beans, tomatoes, and remaining lime juice to the sweet potato mixture. Increase the heat to high until the mixture returns to a simmer, stirring frequently.

7. Once simmering, reduce the heat back to medium-low, and add the diced apples and turkey kielbasa. Stir well then simmer for about 5 minutes.
