Rice Krispie Chocolate Chip Cookies

These Rice Krispie Chocolate Chip cookies are made like chocolate chip cookies with the addition of Rice Krispies for amazing texture. They’re sweet, soft, chewy, crispy, gooey, and delicious in ALL the right ways!

MADE IN A PINCH

2 cups all-purpose flour 1/2 tsp salt 1 tsp baking soda 2 tsp cornstarch, less if you want a less fluffy cookie 3/4 cup butter, softened at room temperature 3/4 cup brown sugar 1/2 cup white sugar 2 eggs 1 tsp vanilla extract 1 cup rice krispie cereal 1 cup mini marshmallows 1 cup mini chocolate chips, to taste

1. Preheat oven to 350F.

2. In a small bowl, stir together the flour, salt, baking soda and cornstarch. Set aside.

3. Place butter and both sugars in a large bowl and beat until light and creamy, about 2 minutes.

4. Beat in the eggs and vanilla until just incorporated.

5. Stir in the flour mixture until just combined, being careful not to over mix.

6. Stir in the marshmallows, rice krispies and chocolate chips, as desired.

7.  Use a cookie scoop to portion out the cookie dough in 1 Tablespoon amounts onto greased or lined cookie sheets.

8. Bake for 8-10 minutes, until lightly golden, avoiding burning the marshmallows.
