Slow Cooker Minestrone Soup

This healthy, mouthwatering Slow Cooker Minestrone Soup is chocked full of delicious vegetables, beans, and pasta. The perfect meal for a cold day and hearty enough to feed a host of family and friends.

MADE IN A PINCH

– butter – white onions, chopped – garlic, minced – celery, chopped – carrots, peeled & chopped – bay leaves – dry thyme – dry sage – Salt & pepper to taste – chicken broth – canned diced tomatoes – white beans, drained – zucchini, diced – baby spinach – ditalini pasta – parmesan cheese, for garnish

Ingredients

1.  Saute onion, garlic, celery, carrots, thyme, sage, salt & pepper in butter until soft.

SAUTE THE VEG

2. Place in bottom of slow cooker.

ADD TO THE SLOW COOKER

3. Stir in broth, tomatoes, and beans.

STIR IN

4. Cook on low 5 - 6 hours.

COOK ON LOW

5. In the last 30 minutes of cooking stir in zucchini, spinach, and pasta.

STIR IN

6. Cook until pasta is tender.

COOK TILL TENDER

7.  Ladle into bowls, garnish with parmesan, serve...
