Honey Garlic & Pineapple Shrimp Skewers

When you need a quick and easy weeknight dinner, consider making these Honey Garlic Shrimp Skewers! They’re packed with flavor, perfect for BBQs, and a hit with even the pickiest kids!


– 2 tablespoons of unsalted butter – 1/4 cup honey – this gives that sweet flavor and sticky texture – 4 large cloves of garlic – 2 tablespoon low sodium soy sauce – the salt to balance the sweet flavor – 1 tablespoon fresh lemon juice (which is the juice of 1⁄2 a lemon) – 1 tablespoon unsalted butter – 1 pound of shrimp – 1/2 tsp Sea salt or more if desired – this is dependant on your tastes and what flavor you are wanting to get. – 1/4 tsp fresh cracked pepper – 1 cup fresh chopped pineapple – the sweet element of this which makes it oh so good. – 2 tablespoons fresh chopped parsley – this is optional but is a great addition.


1. Submerge the skewers in water while prepping the other ingredients. This will help them to not burn when you are cooking them.


2. Next up, Heat 2 of the 3 tablespoons of unsalted butter, honey, garlic, and soy sauce over medium heat and allow the ingredients to combine.


3. Stir until well combined together, bring to a slight boil, and then allow to simmer for 4-5 mins until the sauce has thickened.


4. Remove from heat and then stir in lemon juice.


5. Place the shrimp and pineapple pieces, alternating them on the skewers. Season with salt and pepper on both sides.


6. Brush the sauce on both sides of the skewersto make sure the shrimp and the pineapple are well coated.


7. In a large pan melt 1-2 tablespoons of unsalted butter over medium heat.


8. Sear the skewers for 3-4 mins per side, brushing sauce on the skewers as it cools. Skewers are ready when the shrimp is pink and not opaque.


9. Remove from pan and serve. Enjoy!


10. The additional sauce can be used for dipping or poured over rice. This really adds extra flavor.
