Now that we are approaching spring and summer, it’s natural for us to want to be outside more…to enjoy lazy, fun days. The last thing we want in the heat is to be eating heavy meals and comfort foods such as casseroles.

Whether you are cooking outside, or just want something to be ready quickly, these grilled honey garlic and pineapple shrimp skewers could be a great option.

The entire family will savor the flavor of sweet and sour without feeling too bogged down. Without further ado, here’s you’re new favorite weeknight dinner.

Ingredients Needed For Honey Garlic Shrimp Skewers

Full of healthy, flavorful ingredients, here’s what you’ll need to make this recipe. Note: for full quantities, please check out the handy printable recipe card at the bottom of the page.

  • Unsalted butter
  • Honey – this gives that sweet flavor and sticky texture
  • Garlic – I prefer the taste of using fresh cloves, but dried, minced garlic will work in a pinch.
  • Soy sauce – the salt balances the sweet flavor. I use (and recommend) low sodium.
  • Lemon juice – Go with fresh juice when possible (which is the juice of 1⁄2 a lemon), but you can use bottled if needed. 
  • Shrimp – I like to use shrimp with the tails already off.
  • Sea salt and cracked pepper – flavor enhancers 
  • Pineapple – the sweet element of this which makes these shrimp skewers oh-so-good. 
  • Parsley – this is optional but is a great addition (and really good for you too!).

How To Make Shrimp Skewers

Submerge the skewers in water while prepping the other ingredients. This will help them to not burn when you are cooking them. 

Next up, Heat 2 of the 3 tablespoons of unsalted butter, honey, garlic, and soy sauce over medium heat and allow the ingredients to combine.

Stir until well combined together, bring to a slight boil, and then allow to simmer for 4-5 mins until the sauce has thickened.

Remove from heat and then stir in lemon juice.

Place the shrimp and pineapple pieces, alternating them on the skewers. Season with salt and pepper on both sides.

Brush the sauce on both sides of the skewersto make sure the shrimp and the pineapple are well coated. 

In a large pan melt 1-2 tablespoons of unsalted butter over medium heat.

Sear the skewers for 3-4 mins per side, brushing sauce on the skewers as it cools. Skewers are ready when the shrimp is pink and not opaque.

Remove from pan and serve. Enjoy!

The additional sauce can be used for dipping or poured over rice. This really adds extra flavor. 

Recipe Notes And Tips

Remember to soak the skewers. It is ideal to soak them for at leat 20-25 minutes for the best results. This ensures that they don’t burn during the cooking process. 

Don’t overcrowd the pan. Another thing to remember is that you don’t overcrowd the pan when cooking the skewers. Make sure you stick with only 3-4 skewers at a time. 

Or Grill them instead. If you don’t want to use a pan, you can cook the shrimp skewers on a grill instead. When grilling, I recommend brushing the sauce onto the skewers. In my opinion, grilling them seems to bring out the most flavor.

Variations To Try

There are many different variations that you can try.

Different Protein: Instead you could use chicken. The flavors work really well with it. You could also use meat-free alternatives to make this vegetarian or plant-based.

Add Veggies: Vegetables also work well on the skewer and the flavors are great with most things. Great options would be squash, zucchini, carrots, onions, and peppers.

Can you make this ahead of time?

Yes! If you like to meal prep, put these honey garlic shrimp skewers together and store them in the fridge for a day or two until you’re ready to cook.  

Can you cook them in a different way?

These don’t need to be cooked in a pan. You could cook them on a grill or even on a BBQ. Just brush the sauce onto the skewers to keep them marinaded. 

What can I serve with these shrimp skewers?

You could eat the shrimp skewers with salad or even rice. Using the leftover sauce as a dressing for the salad or to flavor the rice. It tastes amazing!

This quick and easy weeknight dinner idea is a. crowd-pleaser! Even the pickiest of eaters will love Honey Garlic Shrimp Skewers.

Ingredients

  • 2 tablespoons of unsalted butter
  • 1/4 cup honey – this gives that sweet flavor and sticky texture

  • 2 tablespoon low sodium soy sauce – the salt to balance the sweet flavor
