Cowboy Pasta Salad

Cowboy Pasta Salad is an intriguing blend of sweet and savory with just the right amount of heat. A summer side dish or main dish that’s so good it will have you adding this salad to your weekly menu.

MADE IN A PINCH

– 1 lb bacon – 1/2 lb ground beef or turkey – 1 tbsp olive oil – 1/2 tsp garlic powder – 1/2 tsp red pepper flakes – 1 lb rotini pasta – 1 cup mayo – 1/4 cup barbeque sauce – 1 tbsp worcestershire sauce – 2 tbsp spicy mustard – 2 tbsp hot sauce – 1 can whole corn – 1 cup grape tomatoes, halved – 1 cup cheddar cheese, cubed or shredded, for garnish – 3/4 cup green onion, reserve some for garnish – salt & pepper, to taste

Ingredients

1. Cook the pasta as per the directions on the package. Drain and then drizzle with olive oil. Set aside.

2. In a large skillet, cook bacon. Chop the bacon and set aside. (Drain excess bacon fat from pan.)

3. In the same skillet the bacon was cooked in, cook ground meat, onion, garlic powder, red pepper flakes, salt and pepper.

4. Stir in mayo, barbeque sauce, worcestershire sauce, mustard and hot sauce until well incorporated.

5. Add corn and tomatoes.

6. Toss in cooked pasta.
