Rainbow St. Patrick’s Day Cupcakes

Made in a pinch

These Rainbow St. Patrick’s Day Cupcakes are so easy to make – kids of all ages will love helping you assemble and add all the decorations. They’re certainly my new favorite St. Patty’s Day treat!

MADE IN A PINCH

– box yellow cake mix + additional ingredients per instructions OR your favorite recipe – Vanilla frosting in a piping bag – Chunky gold edible glitter – Themed sprinkles – Green & gold M&M’s – Rolo candies – Sour rainbow candy ribbons

Ingredients

1. Bake cupcakes per recipe directions and cool completely.

BAKE THE CUPCAKES

2. Spoon out the center of the cupcake and fill with M&M’s and themed sprinkles.

FILL THE CUPCAKES

3. Pipe a small mound of frosting over the opening then pipe frosting on the whole cupcake.

FROST

4. Add themed sprinkles over the frosting.

ADD SPRINKLES

5. Pipe a small dab of frosting on the top of the Rolo candy and gently roll in the chunky gold edible glitter - this creates your pot of gold.

ADD THE CANDY

6. Place the Rolo on top of the cupcake.

ADD THE ROLO

7.  Place the ends of the rainbow candy on either side of the Rolo candy to from the rainbow over the pot of gold.
