Ingredients Needed For Lucky Charms Cupcakes Recipe

Lucky Charm cupcakes are super easy to make! Here’s what you’ll need to have on hand:

  • White Boxed Cake Mix – plus additional ingredients per directions
  • Green Food Coloring
  • Vanilla Frosting – in a piping bag
  • Lucky Charms Marshmallows – the best part! You can use the marshmallows from the box of Lucky Charms or buy the marshmallow bits separately
  • Themed Sprinkles – sprinkles that match the marshmallows or whatever color you wish
  • Gold Edible Glitter

How To Make Lucky Charms Cupcakes

Here’s how to make these deliciously fun, colorful treats! They really make the perfect St. Patrick’s Day dessert 😉

Step 1

Pre-heat oven to 350 degrees.

Step 2

Begin by preparing the white cake mix in a medium bowl according to the instructions on the box. Add food coloring to the white cupcake batter until you reach the desired color of green.

Step 3

Spoon the cupcake mix into a muffin tin. Optional: line your cupcake tin with regular-size muffin cups.

Bake the cupcakes as directed on the box. Allow them to cool completely.

Step 4

Using a teaspoon, carve out a hole in the center of each cupcake going about halfway into the middle of the cupcake.

Step 5

Fill the center of each cupcake with the Lucky Charms Marshmallows.

Step 6

With the frosting in the piping bag, pipe it onto the top of each cupcake.

Finally, sprinkle on the edible glitter and decorations and ENJOY!!! 🙂

Lucky Charms Cupcakes Recipe Notes And Tips

  • Keep in mind that the cake mix will require some additional ingredients, such as eggs and vegetable oil, that are not individually listed on the ingredient list.
  • If you want even more flavor, feel free to add a teaspoon of vanilla extract to the batter before adding it to the muffin tin.
  • Make sure the cupcakes are completely cool before scooping out the center and adding the marshmallows and frosting the cupcakes. If you frost the cupcakes while they are still warm, the frosting will not hold up well and will melt.
  • Don’t forget the cupcake liners. They will come out of the muffin tin much easier.
  • Lucky Charms Cereal is gluten-free. So use a gluten-free cake mix for yummy cupcakes that are 100% gluten-free.
  • Continue the marshmallow theme to frost cupcakes by using marshmallow fluff to make a homemade marshmallow frosting on top!
  • If you don’t have or don’t want to use a piping bag, simply use a butter knife or the back of a spoon to spread the icing on the top of the cupcake.
  • It will be a little time-consuming to pick the marshmallows out of the cereal, so in the interest of time, it is possible to find the dried marshmallow bits online or in the store.

You can absolutely make the cupcakes ahead of time but I would recommend waiting to decorate until about 30 – 45 minutes prior to serving.

How long will my cupcakes stay fresh?

Keep any leftover cupcakes in an airtight container or resealable plastic bag in the refrigerator. The frosted cupcakes will keep for up to 3 – 4 days in the fridge. I do not recommend storing them at room temperature.

Can I freeze the Lucky Charms Cupcakes?

You can definitely freeze the cupcakes before they are decorated for up to 3 months.

I personally would not freeze them after they have been decorated as it may change the texture and flavor of the icing and decorations.

What type of food coloring should I use?

That is a great question, especially since there are so many different types of food colorings out there to choose from.

I do not have a favorite brand, but I do prefer using a gel. You can use liquid but may have to use a little more of the liquid than a few drops of gel to obtain the same color. Either one will work.
