– olive oil – onion – jalapeno – garlic cloves – chicken broth – canned diced tomatoes (with juice) – Rotel with diced chiles – black beans, rinsed and drained – chicken, cooked and shredded – corn – cumin – chipotle chili powder – Salt and pepper – Optional garnishes: Cilantro, Avocado, Shredded Cheese, Sour Cream and Tortilla Strips

1. Heat the olive oil in a dutch oven or soup pot over medium heat.

2. Add the minced onion to the hot oil and stir occasionally until lightly golden.
