Ingredients

  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tbsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 4 large eggs
  • 1 cup granulated sugar
  • 1/2 cup neutral oil or melted butter
  • 1/2 cup pumpkin purée not pumpkin pie filling
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
Chocolate-Cinnamon Drizzle
  • 1 cup Semi-sweet chocolate chips (or chopped chocolate)
  • 1/4 cup heavy cream or milk
  • 1/2 cup pecans

Equipment

  • Bundt Cake Pan

Method

  1. Preheat & prepare the pan - Preheat oven to 350°F (175°C). Grease and flour your bundt pan thoroughly (or use baking spray with flour).
  2. Mix dry ingredients - In a bowl, whisk together: flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt. Set aside.
  3. Mix wet ingredients - In another bowl, whisk: eggs and sugar until smooth. Whisk in: oil (or melted butter), pumpkin purée, and vanilla. Stir/whisk in buttermilk.
  4. Combine - Add dry ingredients to wet ingredients and mix just until combined (don’t overmix).
  5. Bake - Pour batter into the prepared Bundt pan. Bake 45–55 minutes, until: a toothpick comes out mostly clean (a few moist crumbs are okay), or the cake springs back lightly when touched.
  6. Cool in the pan 10–15 minutes, then invert onto a rack.
  7. Cool completely (about 1 hour) before drizzling.
Make The Chocolate Drizzle
  1. Chop pecans
  2. Place chocolate chips in a heat-safe bowl.
  3. Warm cream/milk until hot (microwave 20–30 seconds or heat on the stove).
  4. Pour hot cream over chocolate, wait 1 minute, then stir until smooth and glossy.
Drizzle and Finish
  1. Drizzle chocolate over the cooled cake.
  2. Sprinkle pecans over the top immediately (while drizzle is slightly soft).
  3. Let set 10–20 minutes before slicing.

Notes

Tip: Bundt cakes stick easily—get the grease and flour into all the ridges/grooves.
