Cool down with this Strawberry Spinach Salad

Cool, refreshing, delicious, and simple...this salad is the perfect summertime side dish (or add some protein to make it an all-in-one meal)!

Ingredients
  

Strawberry Spinach Salad
  • 4 cups Spinach leaves roughly torn
  • 3/4 cup sliced strawberries
  • 1/2 cup feta cheese crumbles
  • 1/4 cup Walnuts chopped
Poppyseed Dressing
  • 1/2 cup mild flavored oil I use light olive oil
  • 1/4 cup apple cider vinegar
  • 1/4 cup sugar
  • 1/2 tsp paprika
  • 1 tbsp dried onions
  • 1 tbsp sesame seeds
  • 2 tsp poppy seeds

Method
 

  1. Take the spinach leaves and roughly tear them in half (if they are large leaves). Place spinach in a large bowl.
  2. Slice strawberries and add to spinach. Mix in.
  3. Add walnuts and feta cheese.
Poppy Seed Dressing
  1. Combine all ingredients into a blender. Blend for about 1 minute, until all ingredients are thoroughly mixed.
  2. Pour dressing into a dressing bottle and drizzle over salad.
  3. Serve immediately.

Notes

  • Refrigerate dressing leftovers in an airtight container for up to 10 days.
  • Once dressing has been refrigerated, it will be almost solid.  When using again, pull the dressing out to warm up slightly about 10 minutes before serving.  Or, run under warm water for a couple of minutes.  Shake well before serving.
  • Add variation to this salad by changing the nuts, adding meat or tofu protein, or adding blueberries or mandarin oranges.
