Pumpkin Spice Bread

Lightened up, but still moist and flavorful, this pumpkin bread is easy to make and disappears quickly!

Ingredients
  

  • 1 15 oz can pumpkin puree
  • 4 large eggs
  • 1/2 cup olive oil or any other cooking oil
  • 1/2 cup unsweetened applesauce
  • 2/3 cup water
  • 3 cups sugar
  • 3 1/2 cups whole wheat flour
  • 2 tsp baking soda
  • 1 1/2 tsp salt
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp ground cloves
  • 1/4 tsp ground ginger

Method
 

  1. Preheat oven to 350 degrees. Grease 6 mini bread loaf pans.
  2. In a large bowl, mix together pumpkin puree, eggs, oil, applesauce, water, and sugar until well blended.
  3. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger.
  4. Stir the dry ingredients into the pumpkin mixture just until blended. Pour batter mixture into the prepared loaf pans.
  5. Bake for about 40 minutes, rotating 180 degrees halfway through baking. The loaves are done baking once a toothpick (or cake tester) inserted in the center of the loaf comes out clean.
