Ultra Easy Pumpkin Pie Squares

Our Easy Pumpkin Pie bars are simple to make and disappear fast! With delicious pumpkin filling on top of a cookie-like crust, they will become the new family favorite!

Ingredients
  

  • 1 1/2 cups all purpose flour
  • 1 cup finely chopped nuts
  • 1/2 cup sugar
  • 1/2 cup firmly packed brown sugar
  • 2 teaspoons ground cinnamon divided
  • 3/4 cup butter or margarine
  • 1 15 oz can pumpkin
  • 1 14 oz can sweetened condensed milk
  • 2 eggs beaten
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 tablespoon all purpose flour

Method
 

  1. Preheat oven to 375 degrees F.
  2. In a medium bowl, combine 1 1/2 cups flour, nuts, sugars and 1 teaspoon cinnamon.
  3. Add butter, mix until crumbly.
  4. Reserve 1 1/4 cups of the mixture.
  5. Pat remaining mixture on bottom of ungreased 13x9-inch baking pan.
  6. Meanwhile, in a large mixing bowl, combine pumpkin, sweetened condensed milk, eggs, remaining 1 teaspoon cinnamon, nutmeg, allspice and salt; mix well.
  7. Pour evenly over crust.
  8. Mix reserved crumbs with 1 tablespoon flour. Sprinkle over pumpkin mixture.
  9. Bake 30 to 35 minutes or until set. Cool 10 minutes. Serve warm.
  10. Store leftovers in refrigerator.

Notes

If you don't prefer the crumbly topping on these bars, simply leave it off and sprinkle them with a little powdered sugar.
