I wake up hungry each morning and ready to eat! My “yogurt with granola’ (as the kids call it) is fast, delicious, and filling – all my requirements for a quick & healthy breakfast for a busy mom!

I frequently teach exercise classes right after I drop my kids off at school, so even though I’m super hungry in the mornings, I need something light that will give me energy and won’t cause me to puke feel bad while I’m teaching.

 

Greek yogurt is perfect for me because it has less sugar and more protein than normal yogurt. Plus, I love it’s thicker, creamier texture! We made the switch years ago and never looked back.

 

I spent years buying granola from the grocery store until I realized how really easy it is to make my own!

 

Plus, like anything else, when you make your own you can enjoy any flavor you like and you control exactly how healthy it is because you know what you are putting into it.

Almond Blueberry Granola is My New Fav Flavor

Recently I made what is maybe my favorite flavor of granola yet, Almond Blueberry Granola!

 

I saw a box of blueberry almond granola at Sprouts one day and the flavor combination just stuck with me. I knew that I had to figure out how to make it myself.

 

As much as I love Sprouts and love how affordable it can be (especially the huge bulk items section!), there are some things that I much rather make because it’s often still healthier and cheaper!

 

A box of granola can cost you $4.00 or more…I can make twice the amount for that price!

 

The other problem I have with store-bought granolas is that they are usually loaded with too much sugar. While that tastes great, it wouldn’t make the healthiest breakfast…or snack.

 

For my Almond Blueberry Granola, I have reduced the amount of sweetener and used a natural sweetener (maple syrup) instead of granular sugar. I cut back enough to keep it sweet enough to enjoy, but healthier.

 

If you prefer it to be sweeter, simply add more to taste.

The blueberries added a great berry flavor and a little more sweetness to the granola as well.

 

My favorite part about this granola was the addition of vanilla and almond extracts. Adding the two together adds an amazing depth of flavor to the granola!

It’s Not Real Granola Without Clusters!

I am a texture-driven person, and if there’s one thing I really dislike, it’s granola that doesn’t have clusters in it.

 

Seriously, clustery granola is the best! I love the texture and feel like the clusters hold more flavor.

 

The secret to making clustery granola is that you press the mixture down firmly on the tray, and you don’t stir the granola at all while it’s baking.

 

Let it sit until cooled after you take it out and then you are able to break it apart with your hands. Perfect every time!

Possible Substitution Ideas

I’ve always loved the blueberry almond flavor combo so that is what I’m sharing with you today.  You could certainly use fresh blueberries instead of dried, or any other fruit you like.  The toasted almonds add such a great flavor and really go well with the sweetness of the blueberries.

Ingredients

Instructions
  1. Pre-heat oven to 375°F and line a large, rimmed baking sheet with parchment paper or a silicone baking mat. Set aside.
  2. In a large mixing bowl, whisk the melted butter, maple syrup, almond extract, and vanilla extract until combined. Add the oats, almonds, sunflower seeds, dates, cinnamon, and salt. Stir until the dry ingredients are lightly coated in the butter mixture.
  3. Gently fold in one cup blueberries, and then transfer the mixture onto the prepared baking sheet. Spread the granola into a thin, uniform layer.
  4. Place the baking sheet into the pre-heated oven and bake for 10 minutes. Remove from oven and give the granola a good stir. Return to oven and bake for another 10 minutes before stirring again.
  5. If necessary, return to oven for another 5 minutes or until the oats are golden brown. Do not overcook or the granola may become bitter.
  6. Bake granola for 35-40 minutes, until edges are just starting to brown. DO NOT STIR GRANOLA AT ALL WHILE BAKING! This will make it so the granola bakes together and creates lots of delicious chunks!
  7. Remove from oven and cool completely. The granola will become nice and crispy as it cools. Once cooled, serve with Greek yogurt and the remaining fresh blueberries. Enjoy!
