As summer draws to a close, you know pumpkin season is here when the Starbucks menu features their famous pumpkin spice latte (also called PSL). It’s spicy, creamy, sweet, and probably the most sought-out drink of the fall season.
In fact, this festive drink is what gets many people excited for the shorter, cooler days instead of crying into their latte about summer coming to an end.
It’s the (fall) king of coffee drinks!
Unfortunately, a grande Starbucks pumpkin spice latte contains 350 calories and 50 grams of sugar. Yikes! If you’re watching your waistline, that’s just a bit too much to enjoy on the regular (unless you’re biking 50 miles a day).

Ready to make your own PSL? Here are the natural ingredients you’ll need to gather.
- Pumpkin Puree – real pumpkin, not pumpkin pie filling
- Oat Milk – you can use any non-dairy milk you want or even use skim milk (nonfat milk) if you don’t mind dairy.
- Maple Syrup
- Strong brewed cup of coffee – or espresso
- Spices – Cinnamon, Nutmeg, Ginger – or a teaspoon of pumpkin pie spice
- Whipped vegan coconut cream (optional for topping)
- Pumpkin shaped sprinkles (optional)

It’s super easy to make your own homemade pumpkin spice latte! Here’s how!
Step 1 – Make The Pumpkin Spice Mixture
In a small saucepan, combine the pumpkin puree, oat milk, maple syrup, cinnamon, nutmeg, and ginger.
Heat the mixture over low-medium heat, stirring occasionally, until it is warmed through.
Step 2 – Add Your Coffee
Brew a cup of strong coffee and add the brewed coffee into a pumpkin mixture, pour your vegan coffee in cups, serve hot.
Step 3 – Add Finishing Touches And Enjoy
Top your skinny pumpkin spice latte with whipped coconut cream for an extra special treat and add sprinkles to give it that extra festive flair.

How To Serve Vegan Pumpkin Spice Latte
I highly recommend adding some coconut whipped cream on top! I made it easy and used the stuff from the can.
And if you really want to take this recipe over the top, add a little cinnamon or pumpkin pie spice – and some pumpkin sprinkles – on top of the coconut whipped cream.
For a little extra flair, add a little bit of crushed graham crackers on top of this pumpkin spice coffee recipe!
Skinny Pumpkin Spice Latte Expert Tips
- If you use sweetened milk in this recipe, reduce your added sweetener.
- Make an iced pumpkin spice latte! Just add all ingredients to a jar with a lid, add ice, screw the lid on, and shake vigorously. Shaking the drink with ice will chill the drink faster.
Vegan Skinny Pumpkin Spice Latte Variations To Try
- Make it kid-friendly – Kids love pumpkin spice lattes too! When I make this to share it with my kids, I simply leave the coffee out, and it’s super cozy and yummy! You can also add additional creamy milk.
- Use espresso instead of strong brewed coffee. Espresso is stronger than coffee, so using it will give you an added jolt of caffeine and flavor. Whether you use coffee or espresso really comes down to a matter of personal preference.
- Swap out the dairy-free milk – Use your favorite plant-based milk of choice. I like oat milk, but cashew milk, unsweetened almond milk, soy milk, and coconut milk are also really yummy!
- Swap out the maple syrup – You could also use honey, agave nectar, or liquid stevia as natural sweetener alternatives.
- Make it caffeine-free – If you want to enjoy your pumpkin spice latte at night, I recommend using decaf coffee or simply omitting the coffee from the recipe.
- Make it low-carb – The problem with lattes is the sweetener. To make your skinny pumpkin spice latte low-carb, replace the maple syrup with 1 or 2 tablespoons of erythritol or allulose.
- Make it nut-free – There are several nut-free milk options that make delicious creamy lattes. I recommend using hemp milk, oat milk, or coconut milk!
How do I make Pumpkin Spice Chai Tea Latte?
If you want to change things up and turn your skinny pumpkin spice latte into a pumpkin spice chai tea latte, it’s super easy!
Just ditch the espresso and steep 2 chai tea bags in half a cup of hot water for a few minutes. Then, discard the tea bag and make your pumpkin spice drink with tea instead of coffee.
