I have a confession – I don’t know exactly why, but I HATE baking lasagna. It’s messy and tough to clean – that’s probably why I always turn to my Lazy Crock Pot Lasagna 😘
But now that I have this easy peasy Instant Pot Lasagna soup in my arsenal, it’s a whole new ballgame! Since you don’t need to use an oven, you can have it on the table SO much faster than it takes to make baked lasagna.
The Best Instant Pot Lasagna Soup
The thick, tomato-based broth is bursting with flavor to deliver the ultimate comfort food – in a bowl! It tastes JUST like lasagna but without the work since your Instant Pot makes it beyond simple to make.

Note: While you can serve this recipe as a side, it is hearty enough to hold its own as a main dish. Add a green side salad and boom – dinner is served.

Ingredients Needed
Here’s what you’ll need to make it. I think you’ll be pleasantly surprised as just how simple this lasagna soup is in the Instant Pot.
Don’t you just love when simple ingredients come together to create an outstanding dish?
- Ground beef (or turkey) – either works, but I think beef has more flavor
- Meat sauce – your favorite spaghetti/marinara type sauce
- Spinach leaves – you can use fresh or frozen, but I prefer to use fresh
- Crushed garlic and minced onion – I usually use dried minced garlic since I rarely have fresh garlic on hand (how is that possible?)
- Water – if you want even more flavor you can use vegetable or chicken broth
- Spices – I love adding basil, parsley, oregano, rosemary, but they are completely optional
- Lasagna noodles – use either gluten-free or your favorite noodle (you can even use oven-ready noodles)
- Mozzarella cheese or other favorite cheese (such as ricotta)
- Salt & pepper – for flavor to taste
- Parsley – for garnish

How Do You Make Instant Pot Lasagna Soup?
- Start by browning up some ground beef – either in a pan or using the sauté function on your IP (honestly I prefer using the stove).
- Add in your onion and garlic and let it soften.
- Transfer to your Instant Pot. Then, add in water or broth, spices, marinara sauce, spinach, and broken up lasagna noodles.
- Make sure the noodles are all submerged, but just submerged. You don’t want to put them to the bottom of the pot or they can burn.
- Seal the Instant Pot and set it to manual, Pressure (HI), for 4 minutes.
- Quick-release the steam and add your favorite cheese toppings. Serve and enjoy!

If you’ve never made this before, here are a few helpful tips to make your first experience a successful and satisfying one!
Avoid a Burn Warning
Use these tips to avoid getting a burn warning when you use your Instant Pot to get soup.
- Don’t forget to deglaze your insert. If you use the sauté feature to sauté the beef, onion, and garlic, pour in a little water or broth and use a wooden or plastic spatula to scrape up any bits that are stuck to the bottom.
- Add ingredients in the order given. Heavier ingredients or noodles can cause a burn warning if they’re right on the bottom.
- Don’t push the lasagna noodles to the bottom. Add them as the last ingredient and only push them down until they are just covered by the liquid. Pasta noodles can cause a burn warning if they are right on the bottom.
Delicious Variations to Try
Sometimes, even with your most favorite dishes, you just want to change them up a little, right? Here are some fun ways to add some variety to this lasagna soup.
- For even more flavor, try swapping in some sausage for the ground beef.
- For a lighter (but still flavorful) version, try using ground turkey instead of beef.
- If you want vegetarian lasagna soup, use sauteed zucchini and mushrooms instead of meat or use a meat substitute such as Beyond Meat or Impossible Burger.
- If you want extra veggies and body, add zucchini, squash, or mushrooms and stir in some additional baby spinach at the end of the cook time.
- Want more cheese? Mix up a combo of ricotta, mozzarella, and parmesan, and put a dollop of this cheese blend on top of the bowl of soup. It’ll melt into the soup to make it so ooey-gooey deliciously cheesy!
- If you want a soupier soup, feel free to add an extra cup of broth after the soup is finished cooking (adding it AFTER prevents you from increasing the time that your cooker need to come to pressure)
- If you want a thicker or heartier soup, feel free to add a couple of extra broken lasagna noodles.

How Do I Store the Leftovers?
This soup will keep for up to 3 days in an airtight container in the fridge, or you can freeze it for up to 3 months.
However, the soup will become thick because the noodles will absorb some of the cooking liquids. Easily loosen it up by add ingsome additional chicken stock or water.
Another option, if you are making this ahead of time, is that you can make the noodles and soup separately. Then simply stir the cooked noodles into the heated soup when you’re ready to serve.
How to Reheat Your Quick Lasagna Soup Recipe
For best results, I recommend reheating leftovers in a pot on the stove top. But if time is an issue, you can heat up leftovers in the microwave.
Consider adding more broth before you reheat your leftovers if the soup is too thick.

Instant Pot Lasagna Soup
A delicious and flavorful soup that is the ultimate comfort food in a bowl! Super simple to make and wonderful with a side salad, it's perfect for feeding the entire family a hearty meal quickly on busy nights.
Ingredients
- 1lb of ground beef
- 1 small onion, diced
- 2-3 cloves of garlic, minced (or you can use dried)
- 24oz meat sauce (or your favorite spaghetti/marinara type sauce)
- 5 cups of water or broth
- 1 tsp each of spices: basil, parsley, oregano, rosemary (optional, or to taste)
- 1 cup fresh or frozen spinach leaves (I used fresh)
- 16oz lasagna noodles (can use either gluten free or your favorite noodle)
- 1 cup shredded mozzarella cheese or other favorite cheese
Instructions
- Brown ground beef in a separate pan on the stove. You can sauté the meat in the Instant Pot or Foodie Pro, but I found it faster to cook it on the stove
- Add beef, water (or broth), meat sauce, basil, spinach, and to the instant pot.
- Break noodles into small pieces and add to the pot. Push down until just covered by the liquid.
- Set to manual, Pressure (HI), for 4 minutes.
- Quick-release the steam and serve.
- Add your favorite cheese toppings.
