We love baked oatmeal! I have been making baked oatmeal for years – sometimes for an easy weeknight meal and sometimes for breakfast/brunch. No matter when I serve it, it’s delicious!

Pumpkin Baked Oatmeal and Baked Oatmeal with Fruit are two of my family’s most requested breakfast requests. Oatmeal is so versatile and be used in so many yummy recipes.

We had an upcoming baseball tournament and I was making a packing list of all the supplies and snacks to keep us all satisfied through the weekend.

I wanted to bring something healthier than Twizzlers and various candies. So I made some Air Fryer Apple Chips, Raspberry Oatmeal Bars, and these Blueberry Baked Oatmeal Bites!

The players and my family did not seem phased by the absence of candy. 😂 My healthy, homemade oatmeal snacks were gobbled up and gone before the tournament was done.

For the next baseball tournament, I will be making a double or triple batch of these oh-so-popular Blueberry Baked Oatmeal Bites!

Ingredients needed for blueberry baked oatmeal bites

Gather up these ingredients:

  • Old-Fashioned Oats
  • Baking Powder – helps provide the rise in the oatmeal bites
  • Cinnamon
  • Chia Seeds – have a mild, nutty flavor that works well with the sweet blueberries and crunch of the oatmeal
  • Eggs
  • Milk – 2% or Whole
  • Applesauce – sweetened or natural
  • Maple Syrup – Golden, Amber, Dark, or Very Dark
  • Blueberries – frozen for fresh

How to make blueberry baked oatmeal bites

Follow these simple instructions to make a delicious snack your family will beg you to make again and again!

Step 1

Combine oats, baking powder, cinnamon, and chia seed in a large mixing bowl.

Step 2

Whisk to combine the ingredients thoroughly.

Step 3

Add egg, milk, applesauce, and maple syrup to the dry ingredients.

Step 4

Mix all ingredients with a spatula or wooden spoon until well combined.

Step 5

Gently fold in blueberries.

Step 6

Prepare the cupcake tin by spraying it with non-stick spray, paper liners, or silicone cupcake liners.

Step 7

Bake for about 18 – 20 minutes or until golden brown at 350 degrees.

Step 8

Remove from oven and allow to cool or enjoy a warm muffin.

Blueberry baked oatmeal bites recipe notes and tips

  • I do not recommend using instant or steel-cut oats for this recipe. The steel oats will make the bites too crunchy and the instant oats will be too soft and not chewy enough.
  • Make a double or triple batch of Blueberry Baked Oatmeal Bites and freeze them for an easy and quick breakfast or snack.
  • Almond or coconut milk are acceptable substitutes for regular milk if that is your preference.
  • Silicone liners make for easy and quick cleanup. These are the ones that I prefer to bake with.

Baked oatmeal bites variations to try

  • Enjoy with a little drizzle of maple syrup. YUM!
  • Blueberries are my favorite fruit in these baked oatmeal cups, but you can also use chopped apples, peaches, strawberries, blackberries, raspberries, or other fresh fruits that you love.
  • Toss in some chocolate chips before baking….because who doesn’t love chocolate chips? 😉
  • Substitute honey or agave nectar for the maple syrup for a slightly different flavor.
  • Add 1/4 – 1/3 cup of wheat germ for an extra boost of nutrition.
  • Include some finely chopped nuts such as pecans or walnuts for some crunch and protein.

What is the best way to store any leftover blueberry baked oatmeal bites?

IF you have any oatmeal bites left over, they will keep nicely in the refrigerator for up to 4 – 5 days if stored in an air-tight container or storage bag.

Can these baked oatmeal bites be frozen?

YES!!! They can be frozen for up to 3 months in a freezer-safe container or freezer bag.

When ready to thaw, place the blueberry bites in the refrigerator overnight or carefully reheat them in a microwave.

Can I use frozen blueberries?

Yes, you can, but do not thaw them before you add them to your recipe. If you thaw them, there will be extra moisture that will make the oatmeal bites more gooey.

If you use frozen blueberries, you may also have to add a couple of minutes to your baking time.

Should I roll the blueberries in flour before adding them to the recipe?

Not necessarily, no. I’ve never done it myself and haven’t had the need to.

Some people recommend tossing the blueberries in a light coating of flour because doing so will help the berries to absorb some of the liquid in the fruit. This will also make them less likely to sink to the bottom of the baked good and keep some of the fruit closer to the top.

  • 1 tsp cinnamon
  • 1 tbsp chia seeds
  • 2 eggs
  • ⅔ cups milk
  • ½ cup applesauce
  • 2 tbsp maple syrup
  • 1 cup blueberries

Instructions

  1. In a mixing bowl combine the oats, baking powder, cinnamon, and chia seeds.
  2. Whisk to combine.
  3. Then add in the eggs, milk, applesauce, and maple syrup.
  4. Use a wooden spoon or spatula to mix until well incorporated.
  5. Fold in the blueberries.
  6. Spoon into greased cupcake pans or silicone cupcake liners.

    1. Yes! You should be able to use any dairy or non-dairy milk that you prefer. The word of caution that I would offer is that some are thicker while others are thinner. If you use a thinner milk, you may want to use slightly less and add gradually to make sure you don’t make the batter too thin.
