Getting out the door in the morning can be rough some (ok…a lot of) days. But you (and the kids) definitely need breakfast before you go to make sure you’re fueled and set up for a successful morning.

I love being able to put together these sandwiches for breakfast in just about 5 minutes, and they keep my boys full and satisfied for until lunch time – which is great because they eat an insanely late lunch at school!

 

But my favorite aspect of these breakfast sandwiches is that we can customize them any way we want. I usually make them simply with egg, ham and cheese.

 

Sometimes, however, I add some tomato slices, spinach or avocado slices or change out the ham for turkey.

Make them dairy-free by leaving off the cheese or gluten-free with gluten-free bread or English muffins. You can add extra greens, leave out the meat, or add in whatever else you like.

  1. Bread – because life isn’t worth living without bread. I use a organic whole grain bread, but you could also use a whole wheat English muffin.
  2. Eggs  – Hubby and I love making a fried egg (in just a dab of olive oil), but one of my boys prefers scrambled eggs. We love a runny yolk, so we cook our eggs over easy. Cook a little longer for a cooked yolk.
  3. Meat – Ham is our fav, but turkey is great too. Bacon or sausage would also be amazing. Meat isn’t necessary, but crazy good!
  4. Other Stuff – cheese, veggies, tomatoes, spinach, avocado slices (we use Havarti slices most often, but I also love the kick that sharp cheddar adds)

 

Process for Making the Healthy Breakfast Sandwich?

  1. Put two slices of bread into the toaster (because toast is always better than bread)
  2. Break an egg (or 2) into a saute pan, flip over
  3. After the bread finishes toasting, spread a little butter (or ghee) onto each slice of toast.
  4. Place a slice of cheese on one slice of toast and a slice of ham on the other.
  5. Once the egg(s) are finished cooking, add them to your toast.
  6. Add any additional components that you wish to add.
  7. Close up your sandwich and cut it in half.
  8. Enjoy!

Can I Freeze a Healthy Breakfast Sandwich?

Yes!!

 

If you want to prep several of this at one time and freeze them to use later, here’s how.

 

To freeze, assemble the sandwiches (without tomato or other toppings) and tightly wrap them individually in plastic wrap or aluminum foil.

 

Once frozen, you can add all the wrapped sandwiches to a large freezer bag. You can thaw as many sandwiches as you need in the refrigerator overnight or just take them out and heat from frozen as needed.

A Breakdown of the process:

  • Toast the bread or English muffins.

  1. Remove sandwich from its wrapping.
  2. Wrap a paper towel around the sandwich and put it on a microwave-safe plate.
  3. Heat the sandwich until the egg has been warmed through and cheese is melty (about 60 seconds for a thawed sandwich, or 90-120 seconds for a frozen sandwich).
