Ingredients Needed For Coffee Cake Bundt Cake Recipe
- White Sugar – granulated or could substitute brown sugar for a richer caramel flavor
- Butter – room temperature
- Eggs – large
- Vanilla Extract – or pure vanilla
- All-Purpose Flour – – feel free to substitute whole wheat flour.
- Baking Soda – helps provide rise in the cake
- Baking Powder – lightens the texture of the cake
- Cottage Cheese – feel free to substitute sour cream or Greek yogurt
- Ground Cinnamon – fresh or packaged
- Powdered Sugar – confectioner’s sugar
- Milk – 2% or Whole

How To Make Coffee Cake Bundt Cake
Step 1 – Cream Butter And Sugar
In a large bowl, cream sugar and butter with a mixer until fluffy and light.
Step 2 – Beat In Eggs
Add one egg at a time until beaten and thoroughly mixed.
Step 3 – Wisk Dry Ingredients
In a medium bowl, whisk together vanilla, flour, baking soda, and baking powder.
Step 4 – Combine Wet Ingredients And Dry Ingredients
Slowly add the flour mixture to the butter mixture in two parts. Alternate adding cottage cheese and then flour mixture. Mix lightly after adding each part.
Step 5 – Add Half Of Batter To Pan
Pour half of the batter into a greased Bundt pan. To grease your pan, simply spray it with nonstick cooking spray.
Step 6 – Make Cinnamon Mixture
In a small bowl, combine sugar and cinnamon. Sprinkle the cinnamon sugar mixture on top of the batter in the Bundt pan.
Step 7 – Add Rest Of The Batter
Add heaping spoonfuls of the remaining batter over the sugar and cinnamon mixture.
Step 8 – Bake
Bake in your preheated oven at 350 degrees for approximately 40 – 50 minutes.
NOTE: Baking time may vary depending on your pan and oven temperature. This easy coffee cake recipe is done baking when you insert a toothpick into center of the cake and it comes out clean.
Step 9 – Cool
Allow the cinnamon Bundt cake to cool for at least 5 minutes. Then invert the bundt pan onto a serving platter or cooling rack.
Allow the cake to finish cooling completely.
Step 10 – Make Glaze And Drizzle Over Cake
While waiting for the cake to finish cooling, mix together powdered sugar and milk into a small mixing bowl. Whisk mixture until fully combined and smooth.
Drizzle the glaze over the cinnamon swirl Bundt cake, cut into individual slices, and enjoy!

- If you prefer the icing for the top of the cake to be thinner, simply use a little bit more milk (1 teaspoon at a time). Likewise, if you want it a little thicker, add a bit more powdered sugar until the icing is to your liking.

- ¼ cup white sugar
- 1 tbsp ground cinnamon
- 1 cup powdered sugar
- 2 tbsp milk
Instructions
- Cream sugar and butter in a large bowl using an electric mixer until light and fluffy.
- Beat in eggs one at a time, ensuring each is well incorporated.
- Mix vanilla in a separate bowl, and whisk together flour, baking soda, and baking powder.
- Gradually add this mixture to the butter mixture in two parts, alternating with cottage cheese, and briefly mix after each addition.
- Pour half of the batter into the greased bundt pan.
- Combine sugar and cinnamon in a small bowl, then sprinkle this mixture over the batter in the pan.
- Add the remaining batter in heaping spoonfuls over the filling, covering it as best as possible.
