My kids don’t often agree on much, but somehow they all love cookies and cream. And marshmallows. A few months ago I went on a kick making homemade marshmallows. And knowing how much my kids love cookies and cream, it was only natural to make an Oreo-flavored marshmallow.

These Cookies and Cream Marshmallow Bars have become one of my go-to easy no-bake treats any time of the year. But I admit – they look right at home on a bake sale table or holiday baking tray!

Also, they make amazing crowd-pleasing DIY gifts and are always a favorite at parties of all types (especially kids’ birthday parties!).

Cookies and Cream Marshmallows Recipe Ingredients

Thankfully marshmallow recipes only require a few simple ingredients! Here’s what you’ll need to make this easy no-bake dessert.

How To Make Oreo Marshmallows

​Just follow these simple steps to make a quick dessert everyone will love!

Step 1 – Chop Up Oreo Cookies

Begin by chopping the Oreo cookies into chunks.

Step 2 – Prepare Gelatin

In a small bowl, add cold water and gelatin. Stir gently and set to the side.

Step 3 – Cook Syrup

Add corn syrup, salt, sugar, and water into a large saucepan. Cook over medium heat.

Cook the mixture until the sugar is dissolved stirring continuously.

Once the sugar is dissolved, turn the heat to medium-high. Bring the sugar mixture to a boil. The mixture should reach 240°F or forms a soft ball.

Step 4 – Add Vanilla

Add vanilla extract to the gelatin mixture.

Step 5 – Combine Syrup And Gelatin

Swiftly add the syrup mixture to the gelatin in a large mixing bowl.

Whisk on high heat until soft peaks begin to form and start to look like marshmallow cream.

Step 6 – Combine Powdered Sugar And Cornstarch

In a separate bowl, mix the powdered sugar and cornstarch.

Step 7 – Prepare Dish

Prepare a rectangular or square baking dish with cooking spray. Then dust the dish well with the powdered sugar and cornstarch.

Step 8 – Add Marshmallow Mixture To Dish

Put the marshmallow mixture into the backing dish and spread out evenly.

Step 9 – Top With Chopped Oreos

Completely cover the top of the marshmallow cream mixture with the Oreo cookie crumbs.

Step 10 – Let Oreo Marshmallow Cream Set

Allow the cookie and marshmallow cream to set up overnight.

Remove the marshmallow and place on a dusted area covered with cornstarch and confectioners’ sugar.

Pro Tip: I often like to sheet a piece of parchment paper down and dust that before putting the huge marshmallow down on top – easy cleanup!

Cut the cookies and cream marshmallows into small pieces. Dust the sides of the marshmallows with the powdered sugar and cornstarch mixture.

Cookies and Cream Marshmallows Recipe Notes And Tips

This simple recipe is such an easy dessert to make! Here are some tips so that your marshmallow goodness turns out perfectly every time!

  • TIP: Mix the powdered sugar and cornstarch before starting the marshmallow cream. This way you will not have to let the marshmallow cream sit and you can keep the process moving.
  • Cooking spray will be helpful when preparing this recipe. Use it in the baking dish and also on the knife when cutting the Oreo marshmallows into squares.
  • Place cookies in a plastic storage bag and smash cookies with a rolling pin or your hands until you reach the desired size of cookie pieces.
  • Use a pizza cutter sprayed with cooking spray can be a great way to cut the marshmallows.
  • Cutting Tip: Cutting cookies and cream marshmallows into pieces before they have cooled and set completely will give you a soft and gooey marshmallow! However, waiting until they are set completely will give you a firmer product that’s perfect for gifting!

    • There are many flavors of Oreos such as peanut butter, toffee crunch, chocolate creme, and mint chocolate that would work fabulously for this recipe. Of course, you can’t go wrong with using double-stuffed Oreo cookies!
    • Use the Oreos with the colored icing for holiday treats such as the Oreos with red icing for Christmas, orange icing for Halloween, and the green mint chocolate Oreos for St. Patrick’s Day. 😜

    Make Oreo Marshmallows Gluten-Free

    Except for the Oreos, all the ingredients in this tasty treat are naturally gluten-free. To make these marshmallows gluten-free, all you have to do is replace the regular Oreos with gluten-free Oreos.

    Oreo Marshmallow Storage

    You can make these Oreo marshmallows ahead of time! They will keep for up to 2 – 3 weeks if stored in an airtight container (or a large Ziploc bag) at room temperature.

    I don’t recommend freezing cookies and cream marshmallows. Their texture will change and they’ll get sticky when they thaw out. It’s really just not good. However, this recipe can be made quickly so they’re easy to whip up if you need to!

    Ingredients

    • 10 Oreo Cookies
    • 10g unflavored gelatin
    • 1 cup cold water, divided
    • 2/3 cup light corn syrup
    • 1/3 cup sugar
    • 1 tbsp vanilla
    • 1/2 Teaspoon Salt
    • 1/4 cup powdered sugar
    • 1/4 cup cornstarch

    Instructions

    1. Chop the cookies into large and small chunks. 
    2. Mix 1/2 cup of the cold water and the gelatin in a bowl, and stir gently. Set aside. 
    3. In a medium saucepan over medium heat, combine the corn syrup, sugar, salt, and the remainder of the water.  
    4. Stir until sugar has dissolved, then turn the heat to medium-high and bring the mixture to boil until it reaches 240°F or softball.  
    5. Add vanilla to the gelatin and then quickly add the syrup mixture and gelatin to a mixing bowl, whisk on high until the mixture forms soft peaks and looks like marshmallow cream. 
    6. Mix the powdered sugar and cornstarch.  
    7. In a square or rectangular dish coated with cooking spray, dust liberally with powdered sugar and cornstarch. 
    8. Pour the marshmallow cream into the dish and spread it out along the entire dish.  
    9. Use the chopped cookies to fully coat the top of the marshmallow.  
    10. Allow the marshmallow to set overnight before you remove it from the dish onto a surface dusted with powdered sugar and cornstarch.  
    11. Using a thin sharp knife, cut the marshmallow into smaller pieces and dust the sides with powdered sugar mixture.
