Piña Colada Popsicles: Only 3-Ingredients

Popsicles are one of my favorite summer treats – and they’re much more guilt-free than ice cream! Make these homemade piña colada popsicles for an easy, refreshing summer treat!

Summer is fast approaching which means I want to be outside and enjoying the amazing weather. What better way to enjoy a hot day with something cold and refreshing and often a drink just won’t cut it.

This is where a popsicle can really hit the spot. You want something refreshing, tastes good, homemade…and COLD! This is where these Piña Colada popsicles (non-alcoholic) are just the treat you need on a warm day.

They’re sweet and full of delicious pineapple and coconut flavor. So without further ado, here is how to make piña colada popsicles.

Ingredients Needed For Pina Colada Ice Pops

  • 1 cup pineapple chunks or crushed. The choice is yours with whether you go fresh or canned here. 
  • 13.5 oz coconut milk, full fat. You need the can and not the coconut milk out of the carton as the consistency isn’t right for this recipe. 
  • ⅓ cup agave syrup for added sweetness

How To Make Pina Colada Popsicles

Here’s how to make the perfect summer frozen treat 😘

Step 1

Get yourself a blender, and add all of the ingredients to it. Mix and blend until the ingredients are combined and creamy in look and texture.

Step 2

Fill each popsicle mold until there is about ¼ inch gap at the top. This gives room for expansion when they freeze. 

Step 3

Insert the popsicle sticks into the center of each mold and gently tap the popsicle molds on the table a few times to remove any air bubbles.

Step 4

Freeze the popsicles until completely set or for at least 6 hours.

Step 5

To remove the popsicles from the mold, run hot water over the outside of the popsicle molds and wiggle until you can pull out the popsicles. This should be done for about 15 seconds to ensure that you can easily remove the popsicles.

Piña Colada Popsicles Recipe Notes And Tips

  • If using frozen pineapple, you may need to add ¼ cup of water or coconut milk to make it creamier. This will help with consistency. 
  • Feel free to use your favorite sweeteners like honey or maple syrup. I like agave since the flavor isn’t so strong but this is all down to personal preference. 
  • If you want a layered popsicle, don’t blend all the ingredients together. Simply blend the pineapples, then add 1-2 tablespoons of pineapples in the popsicle mold, then 1-2 tablespoons coconut milk, and repeat. This gives a great appearance. 
  • Storage: Store leftovers individually wrapped with cling wrap or parchment paper, then store the popsicles in an airtight container or plastic freezer bag.

Variations To Try

If you don’t like pineapple you could try other fruits and follow the same procedure. It would work well with strawberries or any other citrus fruits you like. 

If you don’t want it to be non-alcoholic you could add some white rum to taste. A great way to do this is to soak the pineapple chunks in white rum ahead of combining the ingredients. Then remove the chunks and carry on with the recipe as recommended above. Don’t add any additional liquid to the mixture as this may affect the consistency of the popsicle when it freezes. 

You can get a layered appearance by only combining some of the ingredients and then adding whole chunks of pineapple to make it look and taste a little different.

Here are a few common questions that readers often ask.

Can you make them alcoholic?

Want to add a little, uh, adult quality to these popsicles? You can’t just pour some rum into the recipe because the popsicles won’t freeze properly.

Instead, soak the fruit first and then follow with the recipe. Don’t add any additional liquid.

This will give you the flavor and make them slightly alcoholic. Traditionally a pina colada has white rum in it but you can choose whatever you prefer. 

How long will they last?

It is best to eat them as soon as they are frozen but as long as they are stored in an air-tight container in the freezer they will last up to two weeks. However, they likely won’t last that long. 

What is the best mold to use?

I used this popsicle mold to create the pina colada popsicles. Any molds will work so use what you have. You could even use ice cube molds and then add the cubes frozen to other drinks like lemonade.
