It’s pumpkin season! 

 

I looooooove pumpkin season. With it’s cool, cozy, comforting vibes, pumpkin season totally gives me those deep-down happy Fall feelings.

 

And while I may not go super crazy about indulging in everything pumpkin for the next 2-3 months, I definitely go a little “pumpkin crazy”.

 

Seriously, there’s just something about the air turning cooler, the crisper nights, and the leaves turning colors that brings out a primal urge to eat pumpkin-infused food!

Not only do I love enjoying pumpkin once the summer heat starts turning over to fall briskness, but I’m a huge pancake fan!

 

My kids really like pancakes too!

 

(Honestly, though, they probably prefer waffles over pancakes – a recipe for those will come another day)

 

Pumpkin and pancakes together? You betcha!

Cool Weather Demands Pumpkin Spice Pancakes

 

Seriously. Pancakes are food for the heart and soul.

 

You can find recipes everywhere you turn for pumpkin spice pancakes. And many of them are healthy.

 

But I wanted to give you a really healthy pumpkin spice pancake that uses completely natural and simple ingredients – that your kids will devour!

 

And that you can enjoy without feeling guilty, because…pumpkin season!

 

Oh, and these are also paleo, so they are dairy-free (unless you add a pat of butter) and gluten-free.

 

As a busy mom, recipes in my life need to be:

  • easy to make
  • fast to make
  • delicious
  • healthy (ish)

 

So I set about making the best gluten-free pumpkin spice pancakes that are not only paleo-friendly, but also taste amazing, because, let’s face it. I have 3 little taste testers that will give me their very honest opinions and hold nothing back if they don’t like them!

 

And gluten-free recipes have a reputation having a terrible texture and being difficult to make. So I wanted something that was not only delicious (remember those taste testers!) but also was easy to make and didn’t have that gritty texture that some gluten-free recipes have.

I think I finally got it! After a lot of playing around and a lot of testing, I think we got not only the texture but also the flavor just right 🙂

 

Not only do these pancakes use real, healthy ingredients, but they are quick & easy to make. And the kids loved them! 

 

Mmmmmm, healthy and pumpkin spice deliciousness all smothered together!

 

Can you picture it now…a stack of hot, golden brown pumpkin spice pancakes with a pat of melted butter running over the sides, topped with banana slices, finely chopped walnuts and a drizzle of maple syrup…just image the dancing your taste buds will do when you take a bite of these babies.

 

Breakfast…brunch…brinner (breakfast for dinner) – it doesn’t matter as long as you whip up these tasty morsels.

Instructions
  1. In a large mixing bowl, whisk the eggs, pumpkin puree, and honey until thoroughly combined.
  2. In a separate bowl, combine the almond flour, coconut flour, baking powder, pumpkin pie spice, and salt.
  3. Add the dry ingredients to the bowl with the egg mixture and gently fold the two together until blended.
  4. Heat one tablespoon coconut oil in a large griddle (or cast iron skillet) over medium heat. Once hot, spoon 2-3 tablespoons per pancake and cook for 3 minutes on the first side, then flip and cook for another 2-3 minutes on the other side.
  5. Repeat this process with remaining coconut oil and pancake batter.
  6. To serve, stack 2-3 pancakes per serving and top with sliced butter (or ghee), bananas, chopped pecans, and a drizzle of maple syrup, if desired. Enjoy!
