One of Your New Favorite Greek Side Dishes

Delicious Greek Side Dishes
The first side dish I made was a Mediterranean Pesto Pasta. Yum!
The second side dish I developed is a deliciously light and flavorful Greek Pasta Side Dish. Simple, classic Greek ingredients make this side dish, a simple Greek sauce made from Extra Virgin Olive Oil brings it all together.
Serve warm with my Greek Chicken, Falafel, or any other Mediterranean-type dish! This pasta dish makes the perfect side dish – especially in the summer when you want lighter meals.

Mediterranean Pesto Pasta
- 1 8.8 oz box Barilla Chickpea Pasta
- 3/4 cup grape tomatoes halved
- 1/2 medium onion thinly sliced
- 1/2 medium cucumber sliced in halves
- 1/4 cup olives sliced
- 1/2 cup feta cheese crumbles
- 1/4 cup red wine vinegar
- 1/3 cup extra virgin olive oil
- 1/2 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- salt & pepper to taste
- Cook pasta according to package directions. Mine was perfect after boiling for 8 minutes.
- While pasta is cooking, combine the red wine vinegar, Extra Virgin Olive Oil, garlic powder, onion powder, oregano, salt & pepper together.
- Prepare the tomatoes, cucumbers, olives, and onion.
- Drain pasta. Add dressing and mix to combine.
- Add tomatoes, cucumbers, olives and onion. Top with feta cheese.
- Serve immediately.
Refrigerate any leftovers for up to 7 days.
