This edible art project involves separating out the colors of fruity pebbles cereal and using store-bought donuts, coconut, and icing to create these super fun treats.
They’re ridiculously easy to make and perfect for St. Patrick’s Day, Weekend brunch, or any time you crave a colorful rainbow.

What You Need to Make Rainbow Donuts
Here’s what you’ll need to do this edible project. It’s a super quick and easy “win” with kids!
Equipment Needed
Ingredients Needed
- Fruity Pebbles
- Store-bought donuts (cut in half)
- White frosting
- Shredded Coconut
How to Make Rainbow Donuts
These donuts will be ready in just minutes and are a terrific project to get help from the kids!
Separate the Colors
Separate the fruity pebbles according to color into small bowls.
Frost the Donuts
Empty the white icing into a glass measuring cup and heat for 35-40 sec until melted.
Lay down a sheet of parchment paper.
Lay a cooling rack on top of the parchment paper and cut the donuts in half.
With each half on the cooling rack, pour the melted icing over the donuts.
Decorate
Add your cereal and then add the shredded coconut to the ends to look like clouds.
Allow the donuts to set for at least 30-40 mins at room temperature before moving.
Rainbow Donuts Recipe Notes and Tips
- For best results for these colorful donuts only pour icing on one or two donuts at a time to give you time to add the cereal to the top.
- If you will need to move the donut rainbows before they are dry, set up the station on a baking sheet.
- You may have to add more icing to get the coconut to stick
- Remember ROYGBIV (red, orange, yellow, green, blue, indigo, violet) for your rainbows.
- If you want to skip cutting the donuts in half, simply frost the entire donut and leave the bottom half free of Fruity Pebbles or coconut.
