If you don’t know this about me yet, I hate the cold. I mean hate it. Like bundle up in layers, get under the covers, and drink hot chocolate all day kind of hate it.

And as I write this post, we’re getting a flash snowstorm that’s already dumped about 5 inches in the past 4 hours.

Some delicious Hawaiian rolls and a salad are what we like to serve with Sausage Potato Spinach soup. You just don’t need much of anything else for a very satisfying, oh-so-yummy meal!

Ingredients Need for Instant Pot Sausage & Spinach Soup

  • pork sausage – I used the regular, mild flavor, but I have NO doubt that all flavors are delicious in this recipe!
  • olive oil – just enough to saute the meat and veggies.
  • onion – onion adds so much flavor that perfectly complements all the other ingredients.
  • yellow bell pepper – adds a nice pop of color and some good flavor.
  • mushrooms – more color and texture.
  • white beans – I used great northern beans but any type of white bean such as navy or cannellini would work too!
  • chicken broth – I always use reduced-sodium because you can always add extra salt to a recipe if you want it, but you can’t take it out once it’s in there!
  • water
  • russet potatoes – there’s something about eating potatoes in a soup that I just love; probably because they add a lot of bulk and make the soup feel very hearty and filling.
  • Worcestershire sauce – because YUM.
  • garlic powder
  • Italian seasoning
  • crushed red pepper flakes – this is totally optional. If you like the heat, throw it in there!
  • spinach – adds a nice pop of green, nutritional value and texture to the soup.

How to Make Instant Pot Sausage Potato Spinach Soup

I think you’re gonna be pleasantly surprised at how easy this soup is to make!

Step 1

Turn your Instant Pot to Sauté mode. Once hot, add your sausage, oil, onion, bell pepper, and mushrooms. Stir and cook until cooked; about 3-5 minutes.

Add in your remaining ingredients except for the spinach to your Instant Pot.

Close the lid. Close the valve and set your IP to High Pressure for 10 minutes.

Once the 10 minutes is complete, do a quick release.

  • 1 yellow bell pepper, diced (optional)
  • 1⁄2 cup mushrooms, chopped
  • 15.5 ounce can of white beans (I used great northern beans)
  • 4 cups reduced-sodium chicken broth
  • 2 cups water
  • 3 cups russet potatoes, chopped and peeled
  • 3 Tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 tsp crushed red pepper flakes (optional)
  • 4 cups spinach

Instructions

In a saute pan on the stove, saute sausage, oil, onion, bell pepper, and mushrooms. Stir and cook until tender, about 3-5 minutes. Add all ingredients except spinach to your crockpot. Add spinach for the last 30 minutes. Cook on high for a total of about 2 hours or on low for 3-4 hours.
