A Delicious and Easy Appetizer Idea

Looking for an easy appetizer for your holiday party or the next big game? Or how about an appetizer to take along to a family gathering?

It is well known in my house that if a recipe is long and involved, I just won’t do it. I don’t have time! As a mom with 3 very busy boys, cooking needs to be healthy and efficient in order for me to get it done.

That’s why I love this appetizer! The shrimp are packed with flavor and come together quickly (about 15 minutes).

The Garlic Parmesan Shrimp

I buy my shrimp peeled and deveined to save time. If you plan to peel the shrimp yourself, I recommend allowing for an extra fifteen minutes or so to your prep time.

Combine the first 5 ingredients in a large glass or another non-reactive bowl. Season with salt and black pepper, to taste.

Add shrimp to the bowl and toss to combine.

Transfer the seasoned shrimp to the prepared baking sheet and place in pre-heated oven (400 degrees) to roast until the shrimp are just firm and pink (~6-8 minutes).

Remove shrimp from oven and sprinkle with lemon juice and fresh parsley. Toss to combine when just cool enough to handle. Serve immediately with the creamy roasted garlic dip.

The Roasted Garlic Dip

Just in case it wasn’t obvious earlier, the real star of this appetizer is the versatile roasted garlic dip!

This easy dip is delicious as written, but you can also customize it with your favorite herbs and spices, to create a variety of flavor combinations.

I recommend trying herbs such as dill or parsley first 🙂

Try it with fresh vegetables, as a tasty sandwich spread, or stir some into your favorite creamy soups. You could also add it to mashed potatoes for an extra pop of flavor (my personal favorite).

Another option: pair the roasted garlic dip with cocktail sauce for a 2 dip option!

Instructions
  1. Preheat oven to 400°F and line a large rimmed baking sheet with parchment paper. Set aside.
  2. To make the roasted garlic dip, slice a thin sliver from the head of garlic, just enough so the cloves are exposed. Drizzle the cloves with olive oil and place the whole bulb on a small piece of aluminum foil and wrap tightly.
  3. Place in the pre-heated oven and roast for 40 minutes, or until the garlic is tender and creamy. Remove from oven and set aside to cool slightly.
  4. While the garlic is cooling, prepare the garlic shrimp seasoning by combining the olive oil, minced garlic, Dijon mustard, ground cumin, and grated Parmesan cheese in a large glass or other non-reactive bowl. Season with salt and black pepper, to taste.
  5. Add shrimp to the bowl and toss to combine. Transfer the seasoned shrimp to the prepared baking sheet and place in pre-heated oven to roast for 6 to 8 minutes, or until the shrimp are just firm and pink. Do not overcook.
  6. While the shrimp is roasting, squeeze roasted garlic cloves into a blender or food processor. Add sour cream, Greek yogurt, lemon juice, lemon zest, ground cumin, and cayenne pepper, if using, and blend until smooth and creamy. Season with salt and black pepper, to taste, and transfer to a small serving bowl.
  7. Remove shrimp from oven and sprinkle with lemon juice and fresh parsley. Toss to combine when just cool enough to handle.
  8. Serve immediately with the creamy roasted garlic dip. Enjoy!
Recipe Notes

** parchment paper is your friend for this recipe!

** If you want to make the garlic dip a little healthier, substitute Greek Yogurt for the sour cream, so that you use a total of 1 cup Greek Yogurt instead of 1/2 and 1/2.
