  • Bagel – cut into small pieces
  • Olive Oil – 100%, Virgin or Extra Virgin
  • Mixed Greens – spinach or arugula are great choices too
  • Cherry Tomatoes – halved
  • Bacon Strips – cooked and crumbled
  • Avocado – diced
  • Blueberries – fresh
  • Walnuts – chopped
  • Hard-Boiled Eggs – cut in half or quartered
  • Plain Greek Yogurt
  • Everything Bagel Seasoning – easy to find at most grocery stores
  • Lemon Juice
  • Salt & Pepper
  • Water – if needed to thin down the dressing

How To Make Brunch Salad

Here’s how to put together this colorful and delicious Brunch Salad!

Step 1

Begin by lining a baking sheet with parchment paper. Then preheat the oven to 350 degrees.

Step 2

Cut the bagel into small pieces, about the size of a crouton. Toss it in olive oil, place on the baking sheet, and bake for 10 – 12 minutes until crispy. Set aside to cool.

Step 3

Whisk Greek yogurt, olive oil, bagel seasoning, lemon juice, salt, and pepper together until well combined. Set aside.

Step 4

In a large serving bowl, layer the salad ingredients starting with the mixed greens. Then add on tomatoes, bacon, avocado, blueberries, walnuts, and eggs.

Step 5

Drizzle the dressing over the top of the salad and then sprinkle with the bagel croutons.

  • Green or Red leaf lettuce, Arugula, Spinach, Boston Lettuce, or Frisee & Chicory are a few great mixed green choices. Choose your favorite….you can’t go wrong.
  • Panchetta or turkey bacon are great alternatives in place of regular bacon.
  • If you have a shaker bottle, place all the dressing ingredients in and shake to mix…..quick and easy!!!
  • Use your own homemade croutons or buy your favorite kind instead.
  • The general rule of thumb with dressing is that ‘less is more’ so you might want to use less dressing than you think you might need. Remember you can always add more if need be.
  • Be sure that you wash your greens if they are not already pre-washed. They will also need to be as dry as possible before adding the other ingredients and dressing. If they are not dry they will begin to get slimy more quickly after the dressing is added.

  • If blueberries are not your preference, try some sliced strawberries, apple chunks, mandarin oranges, or raspberries.
  • Change out the walnuts for slivered almonds, pine nuts, pecans, or cashews.

How long can this Brunch Salad keep in the refrigerator?

If you store the leftover salad in the fridge with dressing on it, your salad will keep for 2 – 3 days if kept in an air-tight container. After that, you might find that the mixed greens are soggier than you would like.

If you have not added the dressing to the dry ingredients, your salad should keep for 3 – 5 days in an air-tight container.

Can I make this Brunch Salad ahead of time?

You can definitely assemble the salad ingredients up to 2 – 3 hours ahead of time. I would recommend adding the croutons and dressing until you are ready to serve.

It would be a good idea to prepare all the other ingredients ahead of time such as boiling and peeling the eggs, slicing the tomatoes, and cooking the bacon. These types of things can be done a day ahead of time, if you wish.

Can I make the dressing ahead of time?

Definitely! The dressing will keep in the refrigerator for 5 – 6 days in an air-tight container. You may have to give it a quick stir or shake to make sure the dressing is completely mixed before serving.
