Ingredients Needed For Instant Pot Cheeseburger Soup Recipe

  • Ground Beef – I used ground turkey but you can use ground chicken or lean beef
  • Onion – diced
  • Water
  • Potatoes – red, Yukon gold or russet
  • Condensed Cheddar Cheese Soup – canned, any brand
  • Onion Powder
  • Garlic Powder
  • Salt
  • Pepper
  • Heavy Cream – makes the soup extra rich, creamy, and filling
  • Shredded Cheese – cheddar, parmesan, gruyere, or your preference
  • Green Onions – chopped for garnish

How To Make Instant Pot Cheeseburger Soup

The steps for making this scrumptious soup are super simple. Pair it with a salad, a roll, and a pickle slice to round out your meal.

Step 1

Using the sauté mode on your Instant Pot, add in the ground meat and onion and saute until the meat is slightly pink and onions are translucent.

This step will take about 3 – 5 minutes.

Next you are going to add the water and potatoes to the Instant Pot. Spread the potatoes out evenly in the pot.

Now add in the soup, onion powder, garlic powder, and salt and pepper on top of the potatoes. Do NOT mix.

Put the lid on the Instant Pot, twist, and seal. Be sure the pressure valve is closed. Set to high pressure for 1 minute.

Manually quick-release the pressure valve after the cooking process is finished.

Step 5

Put the Instant Pot back into saute mode and let the mixture begin to simmer. Slowly add in the heavy cream and stir well. Add in green onions and stir.

Step 6

Add in the shredded cheddar cheese and stir slowly to incorporate. Continue stirring gently until cheese is completely melted in.

Step 7

Serve in a soup bowl and add toppings such as bacon bits, additional cheese, green onions, or crackers!

Instant Pot Cheeseburger Soup Recipe Notes And Tips

  • When you saute the ground meat, do not cook it completely as it will continue to cook while under pressure. Saute only until slightly pink.
  • The 25 minutes of cook time includes the sauteing and pressure build up of the Instant Pot.
  • Use vegetable or beef broth in place of the water. This will give your soup a richer, fuller flavor.
  • Russet potatoes are hearty and will hold up well in soups without getting mushy. Yukon Gold and Red will work but be careful to not overcook.
  • This recipe can be made in a crockpot. Simply add all the ingredients instead of the heavy cream and cheese and cook on low for 6 – 7 hours. Add the cream and cheese at the end.

  • Add some cooked and crumbled bacon into the pot…because who doesn’t like bacon? 😉
  • Top the bowl of soup with your favorite flavored croutons or make your own homemade ones. Oyster crackers or crumbled Saltines are also a delicious addition.
  • Chop up some celery and carrots to add a little more texture and flavor to the soup.
  • Sprinkle on a little extra shredded cheese and a dollop of sour cream to your bowl of soup.
  • If you like your soup with a little extra zip, add in a pinch or two of paprika, red pepper flakes, or cayenne pepper to taste.

This is one recipe that I am going to caution you against putting in the freezer.

Because of the amount of dairy in this recipe, it will cause the flavors to change during the thawing process and possibly curdle.

Also, potatoes tend to go mushy once they are frozen and thawed.

This cheeseburger soup will keep up to 4-5 days in the refrigerator. Be sure to cool completely before placing it in a ziploc bag or air-tight container.

Ingredients

  • 1 lb lean ground meat
  • 1/2 onion, diced
  • 1 1/2 cup water
  • 2 cups potatoes, diced
  • 2 - 10.5 oz condensed cheddar cheese soup
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tsp salt
  • 1 tsp pepper
  • 2 cups heavy cream
  • 2 cups shredded cheese
  • 1 bunch green onions, chopped for garnish

Instructions

  1. Turn your instant pot on to sauté mode.
  2. Add in your meat and onion. Sauté until your meat is slightly pink (don’t completely cook your meat as it will continue cooking under pressure) and your onion is translucent. Should take about 3 to 5 minutes.
  3. Add to Your instant pot the water, and potatoes. Make sure the potatoes are evenly spread out in your pot.
  4. Add in your remaining ingredients - soup, onion and garlic powder and salt and pepper. Do not mix it.
  5. Place a lid on your instant pot, and twist to seal. Close the pressure valve on top by pushing it away from you.
  6. Set your instant pot to high pressure for one minute. Once it has finished cooking, do a quick release on the pressure by releasing the pressure valve manually.
  7. Turn your Instant pot on cancel and then turn on sauté mode.
  8. Once the ingredients start to simmer, slowly add in your cream. Once that is completely incorporated after stirring, add in your green onions. Mix.
  9. Stirring slowly with your spoon, incorporate your shredded cheese. Mix until well incorporated and melted in.
  10. Serve and enjoy! You can choose to top with Bacon bits, more cheese, and green onions or add more salt and pepper to your liking.
