This Irresistible Quiche Makes the Ultimate Brunch Dish!

In fact, there are very few things that I make which take a long time to put together!

I just. Don’t. Have. Time. To do “intense” cooking or baking these days. I barely have time to make macaroni and cheese!

And with 3 picky, hungry boys…our meals need to be fast, delicious, hearty and cheap!

So when I was approached by Simply Potatoes® to create a dish highlighting their diced potatoes, I literally started jumping up and down!

I am so excited to share a product with you that I personally love and use in my home on a regular basis.

We recently had an extended family brunch. I took the opportunity to make one of my favorite brunch dishes: crustless quiche!

Remember how I said that I hardly ever make time-consuming dishes?

Take this crustless quiche as an example – I always had this idea in my head that quiche was difficult and time-intensive to make. As a result, I didn’t make them until the last year or so. I would go to others’ houses and enjoy their quiches. And the whole time I would think “how do they have the time to make this?”

As it turns out, crustless quiche is actually very easy to make. Simply combine the ingredients you want in it and bake it. No watching the stove. No time-intensive or labor-intensive ingredient mixing. Woohoo!

Using Simply Potatoes’ diced potatoes with onions was the perfect touch to this dish! It was a snap to add the potatoes to the dish, thanks to them being diced already. Forget about preparing and dicing those potatoes! And the flavor they added was to die for!

And guess what? The kids loved it! They ate just as much of the quiche as the adults did and begged for more. I loved that they ate spinach with their brunch without complaining!

Loaded Crustless Quiche

Simple and super flavorful, this crustless quiche makes the perfect special breakfast or brunch dish!
Prep Time 5 minutes
Cook Time 40 minutes
Total Time 55 minutes

Ingredients
  

  • 8 large eggs
  • 1/2 cup milk
  • 1 cup Simply Potatoes® diced potatoes
  • 1/3 cup Canadian bacon, cubed
  • 1/2 cup fresh spinach, roughly chopped
  • 1/2 cup smoked gouda cheese, cubed
  • 1/4 tsp salt
  • 1/4 tsp pepper

Method
 

  1. Preheat oven to 375º. Spray the inside of a 9 inch pie plate.
  2. Scramble together eggs, milk, salt, and pepper in a medium bowl.
  3. Mix together Simply Potatoes diced potatoes with onions, Canadian bacon, spinach, and cheese in a large bowl. Add egg scramble and combine.
  4. Pour all ingredients into the pie plate and bake for about 40 min. Quiche is done when the middle doesn't jiggle when pie plate is gently shaken.
  5. Let sit for 10 minutes, then cut in slices.

  1. Is it going to be all right if I had a mild pork sausage instead of Canadian bacon in my casserole for the keys that is on here with diced potatoes and green onion as well please let me know on this I’m going to make this tonight as well can I use cheddar cheese instead of gouda?

    1. Hi Linda! Yes, you should be able to use pork sausage instead of Canadian bacon. Same with cheddar cheese instead of gouda. Both of those should substitute just fine. With the sausage, I recommend cooking it first before adding it to the recipe!

  7. I like a dish my mom always made called potatoes supreme. It has hash browns and soups with sour cream and cheese.

  8. I just bought a ceramic scone dish… which is like a quiche dish with wedge divisions. I think doing a crustless quiche in it is going to be awesome… so I can’t wait to try this recipe with Simply Potatoes in it. The smoked Gouda and Canadian bacon and spinach combination with potatoes sounds delicious!

    No doubt about it… white cheddar is my favorite popcorn flavor. I wish I could find a natural white cheddar powder so I could get that white cheddar taste on home-popped popcorn I make with white popcorn kernels (the white kernels are much more tender than regular yellow popcorn, and the hulls are hardly noticeable… and aren’t sharp or hard). Oh, well. In lieu of having a homemade option, I usually buy myself a bag of Smartfood White Cheddar Popcorn, which is very good, and I’m just as happy. Now… where’d I put that bag? Oh…. here it is. [….munch… munch… munch]
