As a busy mom of three active boys, I am always on the hunt for easy and quick weeknight meals. I’m talking 30 minutes or less of work time. Cooking time doesn’t bother me – if it’s in the slow cooker and I don’t have to stand by the stove keeping a close eye on it!
If I’m really honest, I resisted having and using a slow cooker for years. I have no idea why – fear that it might burn the food? However, now it’s one of my absolute favorite kitchen tools! I use mine often now, so it makes me chuckle to think of how resistant I used to be.
This is my absolute favorite slow cooker! It’s wonderful because you can program how high and how long you want to cook your food. My favorite feature is the locking lid so that you can take the crock pot (full of food but doesn’t spill!) to a relative’s house, a friend’s house, a pot luck, a teacher appreciation dinner or anywhere else you need to take it! It really is worth every penny (and makes a terrific birthday or holiday gift!).
This tangy barbeque chicken is perfect! It takes only 5 minutes to whip together the ingredients and turn on the slow cooker. Shredding the chicken takes about 10 minutes (or less). There you have it…a delicious meal with very minimal work!
This chicken dish is perfect for those busy sports and activity nights. You know, those nights when you’re just running and need to grab something quick but don’t want fast food.
My family absolutely loves this chicken! We will eat it plain with rice or noodles occasionally, but we really love it on top of a baked potato. If you really want to get crazy, throw some shredded cheddar cheese on top – it’s simply amazing!

Tangy and delicious, this slow cooker chicken is a snap to make. Add this fantastic and easy weeknight dinner option to your rotation!

- 1/2 cup BBQ sauce just use your favorite BBQ sauce
- 1/4 cup ketchup
- 1/2 cup Italian Dressing use your favorite or a homemade dressing
- 1/2 small onion, minced
- 1/4 cup brown sugar
- 2-3 tsp Worchestershire sauce
- 2-3 chicken breasts
- Spray the inside of your crock pot with cooking spray to make clean up easier.
- Combine all ingredients, except for the chicken, in a mixing bowl. Pour 1/2 the mixture in the crock pot
- Place the chicken in the crock pot. Pour the remaining sauce mixture on top of the chicken.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours.
- When ready to serve, pull out the chicken and shred using two forks to shred up the meat. Then put the shredded meat back into the sauce and mix well.
- Serve immediately. Refrigerate any leftovers for up to 1 week.
Note: you can use a food processor and pulse just a couple of times to mince the onion and/or shred the chicken.

Hi Nicole! Yes! Think of the slow cooker as a mini portable oven. Almost anything you cook in the slow cooker can be baked in the oven. So if you want to try baking it, turn your oven to 350 degrees and bake, covered, for 60-90 minutes (until the chicken is cooked). Then take out the chicken, shred it, and put it back into the sauce.

Hi Sheri! Well, you can either make it on the weekend and have it for the week (meal planning – score!) or you could bake it if you want it a little faster. If you want to bake it in the oven, bake it, covered, at 350 degrees for about 60-90 minutes (until the chicken is cooked). Then take it out and shred it and put it back in the sauce. Voila!

The locking lid would be a cool edition to a good slow cooker. I have tried them and have had mixed results with slow cooker food. I never hated it, but I never loved it much either. Not sure why. This does look delicious though. I would love to try this recipe out.

The locking lid is a terrific addition to the slow cooker – it makes transportation to potlucks, teacher appreciation events, etc so much easier! I think the key to using a slow cooker is to use it for dishes that you won’t need/want a crispy texture. Saucy recipes like this one, soups, pastas, etc really do well in the slow cooker and save oodles of time!
