Slow Cooker Loaded Baked Potato Soup Recipe Ingredients
- Onion – chopped
- Russet Potatoes – large, cut into bite-size pieces
- Chicken Bouillon Seasoning – I ditched standard bouillon seasoning years ago and replaced it with Better Than Bouillon. It’s healthier and SO good!
- Water
- Seasonings – Italian Seasoning, salt, pepper, and garlic
- Butter – salted or unsalted
- Heavy Cream
- Cornstarch – a thickening agent
- Sour Cream – regular or light
- Cheddar Cheese – shredded, optional
- Bacon – crumbled, optional
- Green Onions – chopped, optional
How To Make Slow Cooker Loaded Baked Potato Soup
Step 1 – Prepare Potatoes And Onion
Begin by peeling the potatoes and onion.
Next, chop the onions and potatoes into bite-sized pieces. Add to the slow cooker.
Step 2 – Add Bouillon And Water
Add chicken bouillon seasoning to water and stir to dissolve. Pour seasoned water into the slow cooker.
Step 3 – Slow Cook
Set the slow cooker on high and cook for 4 hours (or 6-8 hours on low).
Step 4 – Make Butter Mixture
Once the potatoes and onions have cooked for 3 hours, melt butter in a saucepan. Add cream, sour cream, garlic, and spices to melted butter.
Step 5 – Thicken Butter Mixture
Bring the butter mixture to a simmer, then whisk in the cornstarch. Allow the mixture to simmer for 5 minutes so it thickens.
Step 6 – Add Mixture To Soup
Pour the thickened cream mixture into the potatoes and allow to cook for 1 more hour.
Serve! Top with cheese, chives, and bacon, or any of your other favorite toppings.

- Use half and half instead of heavy cream for a lower-fat option.
- Make a double batch and freeze part of it for another meal. 😉
- Russet or Idaho potatoes are considered baking potatoes so those are my go-to’s in this soup.

- Cheese – cheddar cheese is always a great go-to cheese for this soup but feel free to try different cheeses such as feta, mozzarella, parmesan, or bleu cheese.
- Toppings – Think outside the box when it comes to the toppings. Change it up a little by adding broccoli florets, green chiles, french-fried onions, or Pico de Gallo.
- Meat – Add in some diced ham for a yummy bite….because who doesn’t love ham, right!?
- Add Some Heat – Toss in some jalapeños for a little kick.
Make It Gluten-Free
All ingredients except the Italian seasoning and the Chicken Bouillon Seasoning are naturally gluten-free. Just make sure these two ingredients are gluten-free before preparing this soup and you should be all set to serve this dish as 100% gluten-free.
How To Serve Loaded Baked Potato Soup
Serve with some garlic bread or Texas toast.
I also like to serve a yummy salad like my Easy Broccoli Salad or Copycat Panera Fuji Apple Salad.

This recipe is perfect for making ahead of time. I would recommend that you wait to add the bacon, chives, cheese, and sour cream until just before serving.
Yes! I don’t recommend using shredded potatoes (like hashbrowns), but you could definitely save some time by using frozen diced potatoes or Southern hashbrowns without seasoning.

- 1 tbsp chicken bouillon seasoning
- 3 cups water
- 1 tsp Italian seasoning
- 1/4 tsp salt

- 1 tbsp butter
- 1 cup heavy cream
- 2 tbsp cornstarch
- ½ cup sour cream
Instructions
