Easy Stuffed Breakfast Biscuits (AKA Breakfast Bombs)
You may not find anything easier and more delicious than these Stuffed Breakfast Biscuits (aka Breakfast Bombs or biscuit bombs)! With flaky layers of biscuit stuffed with sausage, eggs, and melty cheese, this is one of our family-favorite easy breakfast recipes that’s as perfect for busy mornings as it is for weekend brunches!
Is it just me, or do you sometimes feel like you’re pushing a wet noodle in the mornings while trying to get the kids ready for school?
I remember the days when two out of three would jump out of bed and get ready quickly. Now that they’re preteens and teens, that tune has changed a bit. 😜
And my third has ALWAYS been super slow in the mornings. Getting him out of bed, clean, dressed, fed, AND to school on time always strikes me as a minor miracle!
Even though the mornings can be a challenge, I want my boys to make it to school having had a nutritious breakfast so that their bodies and brains are fueled and ready for learning.
If you understand the struggle (it’s REAL), I have discovered that the key to morning success in our home is to make simple and filling breakfasts.
Say hello to our new family favorite: stuffed breakfast biscuits! (my kids love calling them breakfast bombs because #1 they’re boys and #2 they deliver an explosion of flavor!)
These biscuits are perfect to make ahead for a delicious grab-and-go breakfast for busy mornings, weekends, road trips, holidays, or ANY day!

These stuffed breakfast biscuits are SUPER easy to adapt to anyone’s taste preferences and never fail to satisfy since they keep you feeling full until lunch!
Tip: I like to make these while my boys are taking their morning showers so that they have a hot breakfast waiting for them. Or, you can make these the night before or during your weekend meal prep for an easy grab-and-go option!
Ingredients Needed For Stuffed Breakfast Biscuits
You only need 4 simple ingredients for this delicious and hearty breakfast recipe:
- Ground Breakfast Sausage – mild or hot depending on your taste
- Eggs – medium or large eggs
- Shredded Cheddar Cheese – mild or sharp cheddar cheese, American or Mexican cheese blends are all great choices.
- Canned Biscuits – Original or Southern Homestyle Buttermilk biscuits will work well
How to Make Stuffed Breakfast Biscuits
Making breakfast bombs may look challenging, but it really couldn’t be easier! And the final result combines all our favorite breakfast foods into the breakfast of champions!
Step 1 – Preheat Oven
Preheat oven to 375 degrees.
Step 2 – Brown Sausage
Brown the sausage in a large nonstick skillet over medium heat and drain. Leave a little bit of grease in the pan after draining.
Step 3 – Scramble Eggs
Crack eggs directly into the skillet and stir until cooked. Remove pan from heat, set aside, and let cool for approximately 5 minutes.
Step 4 – Split Raw Biscuits In Half
Remove the biscuits from the can and separate dough for each biscuit in half. With each half, gently press down and out to form large, thin circles.
Step 5 – Stuff The Biscuits
Place one biscuit half on the baking sheet and place a generous amount of egg mixture in the center of the biscuit. Top with cheese.
Step 6 – Seal Biscuits Closed
Place 2nd half of biscuit on top of the mixture. Use the tines of a fork to press and seal the edges of the biscuits together.
Step 7 – Bake Biscuits
Bake in the preheated oven on a lined large cookie sheet until biscuits are golden brown.
Step 8 – Serve And Enjoy
Place your stuffed breakfast biscuits on a cooling rack for just a minute and serve these easy breakfast bombs right away for an easy hot breakfast!
What To Serve With Breakfast Bombs
If you aren’t running out of the door when you eat these and are aiming for more of a sit down meal, here are some delicious sides ideas:
- Greek yogurt with fruit
- Fruit such as orange slices, grapefruit, banana slices, berries, or apple slices
- Potatoes – any way you love!
- Skim milk, orange juice, or grapefruit juice
Stuffed Breakfast Biscuits Recipe Notes And Tips
- Add a couple of tablespoons (and up to 1/4 cup) of milk to the cracked eggs and whip before cooking. This will add additional fluffiness to the eggs. It will also make a little bigger batch if you like more eggs in your breakfast bomb.
- Savory dishes always need a pinch of salt, so the best way to incorporate it is by adding salt and pepper to the scrambled mixture while cooking.
- Don’t forget to lightly spray the pan you are baking the biscuits on with cooking spray so the biscuits don’t stick!
- Instead of using a baking sheet, try using muffin tins! You will still need to pinch the edges of the dough and definitely spray the muffin tin with non-stick spray. This will give you biscuits more of a muffin look but will be just as delicious.
Variations Of The Stuffed Breakfast Biscuits To Try
- Use a rolling pin to roll out the biscuit dough on a lightly floured surface and add your stuffing mixture then fully wrap the dough around and bake your biscuit bombs in muffin cups.
- Coat the top of each biscuit with an egg wash or melted butter (I don’t do this, but some people prefer it).
- Use maple-flavored breakfast sausage for a delicious, sweet and savory stuffed breakfast sandwich.
- Substitute the sausage for ham, chicken sausage crumbles or links, crisp bacon, or turkey bacon strips.
- Add chopped green peppers, onions and/or mushrooms to the scrambled eggs.
- Make some sausage gravy and pour some over the top of your stuffed biscuit when serving. Yum!
Stuffed Breakfast Biscuits FAQs
If you have leftovers, your remaining biscuits will stay fresh up to 2-3 days in the fridge in an airtight container or plastic bag. If you leave them any longer than that, they’ll start to get soggy.
You can freeze these breakfast bombs for up to 2 months in an air-tight container or a freezer bag.
If your biscuit is not frozen, wrap it in a paper towel and reheat it in the microwave for 45 – 50 seconds. If it is frozen, microwave on 30-40% power for 1 1/2 minutes. Place back in microwave if it needs a bit more time.
The air fryer is another great option to reheat and crisp up. Place refrigerated biscuits in a single layer in the air fryer for approximately 1 – 2 minutes. If you put a frozen biscuit in the air fryer, heat for approximately 2 – 3 minutes.
In my experience, frozen biscuits are meant to be baked right out of the freezer. I don’t think it would be the best option since you have to be able to crimp the edges of the biscuit after adding the filling.

- 1 can (8 - 10) large biscuits
Instructions
- Preheat oven to 375 degrees.
- In a large skillet, brown the sausage. Drain the grease but leave a little grease in the pan.
- Crack eggs directly into the pan and stir until cooked.
- Remove pan from heat and let cool for about 5 minutes.
- Split each biscuit in half. Place half on baking sheet and gently press each biscuit down and out to form a large thin circle.
- . On one half of the flattened biscuit half, place a generous portion of the sausage and egg mixture in center.
- Top the mixture with cheese.

Can i just freeze them after stuffing and cook when needed?
