I love grilling, so I’ve been working to create more grilling recipes beyond burgers, chicken, and pork chops. Kabobs are a fun way to pair some of my favorite veggies and meats on a stick (and everything is more fun to eat on a stick!).
Greek beef kabobs (also called souvlaki skewers) are the perfect dish to spice up any gathering or family dinner. Not only are they super easy to prepare, but they can also be enjoyed as appetizers or dinner.
The best part? They’re incredibly adaptable, allowing you to add a personal twist and cater to everyone’s taste buds.

Ingredients Needed For Greek Beef Kabobs Recipe
- Beef – cubed
- Garlic Cloves – minced or chopped
- Red Onions – chopped into 1-inch pieces
- Bell Peppers – yellow pepper and/or red bell pepper, chopped into 1-inch pieces
- Springs of Thyme
- Fresh Parsley – chopped
- Greek Lemon Pepper Seasoning – or homemade Mediterranean seasoning
- Salt and black pepper (optional)
- Olive Oil
- Skewers – wooden bamboo skewers or metal skewers

How To Make Greek Beef Kabobs
This easy recipe is a cinch to make! Just follow these step-by-step instructions!
Step 1 – Soak Skewers
Begin by soaking the kabob skewers in water in a large bowl as you are preparing the vegetables and meat.
Step 2 – Prepare Baking Sheet
Line a baking sheet or cookie tray with aluminum foil. Set to the side.
Step 3 – Make A Simple Marinade Of Olive Oil
In a medium mixing bowl, combine the cubed beef and marinade ingredients (minced garlic, thyme parsley, lemon pepper seasoning, and salt and pepper (if using)).
Add a sufficient amount of olive oil to help ingredients stick together which would be approximately 1 1/2 to 2 tablespoons.
Step 4 – Make Your Greek Kebabs
Begin alternating the veggies and the steak cubes on the kabob (for example, a piece of marinated steak a piece of pepper). Continue the pattern until the kabob is full.
NOTE: I can fit about 6-7 cubes of marinated steak on each kabob.
Step 5 – Cook Your Shish Kabobs
Once all the beef and veggies are on the kabob skewers, place the kabob on the prepared tray or cookie sheet.
Step 6
Broil you Greek beef kabobs for 8 – 10 minutes until cooked through. Internal temperature of the beef should reach 145 degrees F.
Greek Beef Shish Kebabs Expert Notes And Tips
- If you would prefer to grill the kabobs, cook them on your outside grill (or indoor grill) for 4 minutes on each side, turning once.
- Stew meat is perfect for grilling and a bonus as it already comes cut up in cubes.
- Marinating the beef overnight will help to tenderize the red meat, creating flavorful meat.
- Cutting the vegetables about the same size as the beef will help the kabob cook more evenly.
Variations of Souvlaki Skewers To Try
- Fresh Vegetables – Peppers are not my favorite vegetable so use what you like the most. Mushrooms, grape tomatoes (or cherry tomatoes), yellow squash, or zucchini are also yummy options. Sweet yellow onions are a great choice!
- Pita Bread – Save the leftovers, take them off the skewer, and serve the beef and veggies on warm pita bread with some feta cheese. Use naan bread, if you prefer!

Greek Beef Kabobs FAQs
I prefer to use top sirloin steaks for extra tenderness. Flat Iron, tenderloin, or strip steak are good options as well. Use what you like best, have available, or what is most affordable.
The kabobs are made of wood, therefore, the stick will burn and create a fire hazard. Soaking them in water adds moisture to the stick and prevents it from catching on fire.
Yes, you can start them early! You can cut up the beef up to 24 hours in advance and marinate the meat at least 6 hours in advance. You can also cut and prepare the veggies ahead of time. I would wait to assemble the kabobs until a few hours before or just before cooking.
If stored in an airtight container or storage bag, your Greek Beef Kabobs will keep for up to 3 – 4 days in the fridge.
I prefer to buy extra beef and prepare the cubes. I freeze what I will not be using for our meal. This way, all I have to do is pull the bag out of the freezer, prep the veggies and I am ready to go for another meal or two.

Greek Beef Kabobs
Ingredients
- 1 lb beef, cubed
- 4 cloves garlic, minced or chopped
- 1/2 red onion, chopped in 1" pieces
- 1 bell pepper, chopped in 1" pieces
- 5 springs thyme
- 2 tbsp fresh parsley, chopped
- 1 tbsp greek lemon pepper seasoning (or homemade Mediterranean seasoning)
- 3 - 4 tbsp olive oil, as needed
- 8 wooden skewers
Instructions
- Soak the kebabs in water as you prepare the meat and veggies. Set aside.
- Prepare a cookie sheet or baking tray by lining it with tinfoil. Set aside.
- In a medium bowl, combine the cubed beef, minced garlic, thyme, parsley and the lemon pepper seasoning. Use enough oil to help everything stick together, approximately 1 1/2 - 2 Tablespoons.
- Start threading the veggies and meat cubes in an alternate pattern on your kebabs. We fit 7 cubes of beef per small kebab.
- When all meat is threaded on the kebabs, place the prepared kebabs on the prepared tinfoil-lined tray.
- Place under the broiler for 8-10 minutes until cooked through (minimum internal temperature of 145F).
- If grilling, grill each kebab for 4 minutes on each side, turning once.
