Well, today I have a new one for you! And it’s one of my new go-tos because it’s DELICIOUS. Say hello to a one-pot cheesy chicken broccoli rice skillet meal.
I used to buy those cheesy broccoli rice box mixes and add chicken to make it a one-pot meal. But I’ve stepped away from most of those rice packets because of the ingredients.
Besides, making the same thing from scratch is nearly as easy (and quick)! 😁
And it has pantry-staple ingredients you probably already have!
But the best part is the lack of dishes.
This is the kind of chicken recipe that sits in your back pocket when it’s 5 pm and you don’t know what you’re making for dinner.

Here’s how to make this delicious weeknight meal.
Ingredients
- Olive oil
- Onion
- Chicken breasts
- Salt & pepper
- Garlic
- Rice
- Cream of chicken soup
- Chicken broth
- Broccoli florets
- Cheddar cheese
- Parsley
Chicken Broccoli Skillet Preparation Instructions
Just follow these step-by-step instructions for chicken, broccoli, and rice skillet, and you’ll have dinner ready in no time!
Step 1
In a large skillet cook chicken and onion in olive oil over medium heat.
Step 2
Next, stir in salt & pepper and garlic.
Step 3
Now, add in rice, soup, and broth and bring it to a boil then reduce and cook until rice is done.
Step 4
Stir in broccoli and ½ cup cheese into this chicken broccoli rice skillet meal.
Step 5
Sprinkle the remaining cheese on top.
Step 6
Place under broiler until golden (optional – I often don’t do this).
Step 7
Finally, garnish with parsley, serve, and enjoy this cheesy chicken broccoli rice skillet!

Cheesy Chicken Broccoli Rice Skillet Recipe Tips
- You can use chicken breasts, thighs, or even rotisserie chicken for this recipe. If you are using cooked chicken, wait to add it into the recipe after the rice has cooked.
- Instead of using premade chicken broth, I really like using Better than Bouillon Chicken base in a jar. Just add water to turn it into chicken broth.
- Adding the broccoli towards the end of the rice cooking keeps it from getting overly soft. The broccoli is done once it’s turned bright green and a little soft.
- Feel free to change the amount of cheese you add to taste. I like it cheesy, so I add about 2 cups.

One-Pan Cheesy Chicken, Broccoli, and Rice is a cheesy, easy dinner loaded with simple ingredients like chicken, rice, and broccoli. This one-pan meal can be ready in under 30 minutes!
Ingredients
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 chicken breasts, cut into small pieces
- Salt & pepper
- 4 cloves garlic, minced
- ¾ cup rice
- 1 can cream of chicken soup
- 2 cups chicken broth
- 2 cups fresh broccoli florets
- 1 cup cheddar cheese, shredded
- 1 tablespoon parsley
Instructions
- First, start by cooking your onions in a little olive oil in a 12-inch skillet. Once they’re soft you can add your seasoned chicken breast. If you’re using a rotisserie chicken you can add it later when you add the cheese.
- Next, you’ll saute your rice in a little olive oil. This gives the rice extra flavor by toasting it. Have your liquid on had because you’ll want it as soon as it’s done toasting.
- Add your chicken broth. I Better than Bouillon Chicken base in a jar (you add water).
- After the rice has been cooking for a while add your broccoli and let it steam.
- Finally, when all the liquid has been absorbed by the rice you’re ready to add the cheddar cheese. Stir 1/2 a cup in and sprinkle the rest on top to melt.
