Step 1
First, preheat your oven to 400 degrees and thoroughly clean the potatoes.
Step 2
Peel the potatoes and cut the ends off to square them up.
Use a sharp knife to cut the potato slice lengthwise into 1/4-inch slices to create rectangles. Cut thin slices because thicker slices won’t get as crispy.
Step 3
Place the potato rectangles on your cutting board. Place skewer sticks parallel to either other and place potato slices between skewers to control the depth of the cuts.
Cut vertical slices halfway through on one side – the skewers help you not cut all the way through.
Step 4
Flip the potato over and repeat the process.
Step 5
Gently stretch out the potato, starting at the bottom and work towards the middle. This part is so much fun!

Place the potato slices into a bowl of cold water to rinse.

- 1/3 cup unsalted butter, melted
- 2 tablespoons fresh parsley chopped (optional) 1 garlic clove, minced
- 1⁄4 tsp salt
- 1/8 tsp black pepper
- 1⁄4 tsp oregano
- 2 tablespoons grated parmesan
Instructions
- Preheat oven to 400.
- Peel and cut potatoes into long rectangles.
- Place potato between skewers to control the depth of the cuts
- Cut vertical slices halfway through on one side.
- Flip it over and cut diagonal slices halfway through.
- Place the potatoes into a bowl of water to rinse.

I made these this evening I did everything exactly as stated. They were done in about 25 minutes at 400°, but they still looked like the inside of a potato. They never browned or Crisped up at all.They tasted fine.
Hi Sherry! Thanks for letting me know about this! Some ovens cook at different temperatures. So even though the dial or keypad may say one thing, there can be a good amount of variation within what temperature they actually cook at, if that makes sense. In my oven, it works great as written in the recipe. However, if your potatoes don’t brown with the same numbers in the recipe, what you can do is simply cook a little longer, keeping an eye on them, until they do brown (or cook at a little higher temperature). 🙂
