In a nutshell, I love that Barilla’s Chickpea Pasta:
  • has a great texture – very similar to traditional pasta
  • cooks like traditional pasta (mine was perfect at 8 minutes)
  • has a great taste – similar to traditional pasta, but just the teensiest bit earthy when comparing side to side. However, for anyone who might feel turned off by that, I didn’t notice the difference at all once I made my pasta dishes.
  • contains only ONE ingredient!
  • is a healthy pasta alternative

Easy Greek Pasta Side Dish

Light and tasty side dish that pairs well with any Mediterranean main dish!
Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes
Servings: 4 servings
Course: Side dishes

Ingredients
  

  • 1 8.8 oz box Barilla Chickpea Pasta
  • 3/4 cup grape tomatoes halved
  • 1/2 medium onion thinly sliced
  • 1/2 medium cucumber sliced in halves
  • 1/4 cup olives sliced
  • 1/2 cup feta cheese crumbles
  • 1/4 cup red wine vinegar
  • 1/3 cup extra virgin olive oil
  • 1/2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • salt & pepper to taste

Method
 

  1. Cook pasta according to package directions. Mine was perfect after boiling for 8 minutes.
  2. While pasta is cooking, combine the red wine vinegar, Extra Virgin Olive Oil, garlic powder, onion powder, oregano, salt & pepper together.
  3. Prepare the tomatoes, cucumbers, olives, and onion.
  4. Drain pasta. Add dressing and mix to combine.
  5. Add tomatoes, cucumbers, olives and onion. Top with feta cheese.
  6. Serve immediately.

Notes

Refrigerate any leftovers for up to 7 days.
