Potato Taco Bowl Recipe Ingredients
- White Potatoes – large, washed
- Taco Seasoning – pre-packaged or homemade
- Salt and Pepper – to taste
- Oil – olive oil, canola, or coconut oil
- Ground Beef – 85/15 or 90/10
- Water – optional, depending on your preference
- Red Onion – diced
- Minced Garlic – pre-minced or freshly chopped
- Toppings – diced tomatoes, shredded cheese, avocado, chopped red onion, sour cream, and cilantro

How To Make A Potato Taco Bowl
- Preheat – Begin by preheating the air fryer.
- Peel and Slice – Next, peel the potatoes. Once peeled, slice each potato into 1/2″ slices. Cut slices into quarters or halves, as desired.
- Season – In a large mixing bowl, add potatoes and 1 tablespoon taco seasoning. Season with salt and pepper, to taste.
- Cook – Add the prepared potatoes to the air fryer, drizzle with oil, and cook for approximately 8 – 10 minutes. Toss the potatoes halfway through the cooking process.
- Brown Hamburger – Cook hamburger in a large skillet until cooked thoroughly, breaking up the large chunks of beef as it cooks.
- Season the Hamburger – Add the remainder of the taco seasoning and water to the cooked hamburger. Stir until well incorporated.
- Onion and Garlic – Add red onion and garlic to the hamburger mixture and cook for approximately 3 – 4 minutes, stirring periodically.
- Assemble – Add potatoes to the bottom of a single-serve bowl. Spoon a generous amount of the seasoned beef on top of the potatoes. Finally, add all your favorite taco toppings such as sour cream, lettuce, pico de gallo, salsa, avocados, cilantro, jalapeños, shredded cheese, and diced tomatoes.






Taco Potato Bowl Notes And Expert Tips
- Aim for identical potato sizes when cutting. This ensures all pieces finish cooking at the same time.
- Be sure to drain the grease from the ground beef, so it is not too oily or heavy when building your bowl.
- If adding lettuce to your bowl, remember that the hot ingredients will cause the lettuce to wilt, so place it on top after adding all the other ingredients.
- If you have the extra time, put your quartered potatoes in water and place them in the refrigerator for at least one hour. This helps to draw out some of the starch and sugars, which will prevent them from burning or getting mushy during the cooking process.
- Use frozen, diced potatoes to make the preparation of this Potato Taco Bowl faster. You can skip washing, peeling, and cutting fresh potatoes. You get a crispy bowl of potato goodness with way less work.

Taco Potato Bowl Storage
My preference is to store each ingredient in its own container and place them in the fridge for up to 3-4 days.
The potatoes and the taco meat can be reheated together or separately in a frying pan, air fryer, or microwave.
Freezing instructions
I would not recommend freezing the Potato Taco Bowl as an assembled dish. However, you can make a large batch of taco meat and freeze it in smaller containers so that you will have it ready the next time you fix this dish.
You can freeze fried potatoes, but keep in mind that freezing changes the texture, so they will lose their fresh crunch and may become a bit softer or mushier once thawed.

YES! All of the ingredients except for the potatoes can be chopped or cooked in advance. This Potato Taco Bowl is best assembled with freshly cooked, crispy potatoes.
Russet potatoes are dry and starchy, so they will hold their shape and get extremely crispy when fried or roasted. They are the best choice for a classic crunch.
Yukon Gold potatoes are a great substitute because they are considered all-purpose potatoes. They have a little more moisture than Russets, which leaves the inside soft and creamy, but their thin skins also crisp up nicely.

Potato Taco Bowl
This Potato Taco Bowl swaps rice for crispy, seasoned potatoes, creating a satisfying meal that's loaded with bold Mexican-inspired flavors!
Ingredients
- 2 large white potatoes
- 3 tbsp taco seasoning**
- salt and pepper, to taste
- 1 tsp oil*
- 1 lb ground beef
- 1/2 cup water, optional
- 1 small red onion, diced
- 2 tsp minced garlic
- *plus desired toppings: tomato, shredded cheese, avocado, more red onion, sour cream, and cilantro*
Instructions
- Preheat airfryer to 380F.
- Peel and slice the potatoes into 1/2" slices, then slice them in halves or quarters.
- Place the potatoes in a large bowl and toss with 1 Tablespoon of the taco seasoning, plus salt and pepper to taste.
- Place the seasoned potatoes in the air fryer and drizzle or spray with oil.
- Airfry for 8-10 minutes, tossing halfway through the cooking time.
- Meanwhile, in a large skillet over medium heat, cook the ground beef until fully browned and no longer pink.
- Break up the clumps of beef with a spatula or spoon as it cooks.
- Add remaining seasoning, salt, and pepper to taste, and optional 1/2 cup of water. Stir well to distribute.
- Stir in the diced red onion and minced garlic. Cook for 3-4 minutes, stirring occasionally.
- Assemble your taco bowls by placing the potatoes in the bottom of each serving bowl, top with a generous scoop of the seasoned ground beef, and then add all of your favorite taco-inspired toppings - shredded cheese, diced tomatoes, sour cream and salsa, etc.
Notes
*Fry the potatoes in a pan or bake in the oven, but you will want to increase the oil to at least 1 tablespoon if using those methods to cook the potatoes.
