I love to bake! Who’s with me?

In fact, baking was my gateway into cooking. My grandmother worked really hard to teach me cooking basics when I was a teenager. However, I had NO interest at the time.

I felt bored every time I tried to cook – like I was wasting my time waiting for the water to boil or the casserole to bake in the oven.

But somehow baking felt different. Now maybe it was the fact that I was creating sweet dishes (I have the never-satisfied sweet tooth) instead of healthy dishes that appealed to me. Or maybe it was something about the ritual of mixing the dry and the wet ingredients separately before combining them. Mixing bowls. Measuring spoons. My favorite mixing bowls. I love it all.


Before getting married, I would bake something once a week. It helped me relax and was almost like a reward at the end of a busy week. Once I got married, I started baking a little less frequently because my husband didn’t want the sweets sitting around the house, tempting him. I totally get it.

Then I started having kids! Boy, do kids tend to require a lot of time and attention! Once I started having babies, I didn’t have time to bake often at all. But I still squeezed it in here and there – when I really needed to relax.

These days I spend my time shuttling kids to and from sports, activities, doing homework and general family activities. All that activity leaves little time for baking, which is good for my waistline (ok, who am I kidding – I have a secret stash of chocolate that I break into on a regular basis), but bad for reducing stress and relaxing.

While I wish I could indulge and bake more often than I do, I realize that I am more grateful now when I do bake. I think it’s even more enjoyable now that I don’t have the opportunity to take it for granted.

Watch out at the holidays, though – I still go nuts then!

I had the chance this week to make a favorite dish: peach crisp. I can’t say enough good things about this dish – it has everything I need and want in a dessert! It’s easy to make, simple ingredients, delicious, and it goes in the slow cooker! win, win, win!

While I now love and appreciate cooking entire meals, I don’t know if I’ll ever love the act of cooking as much I do baking.

Slow Cooker Peach Crisp

Total Time 3 hours 10 minutes
Servings: 6 servings

Ingredients
  

Peaches
  • cooking spray
  • 6 cups sliced peaches fresh or frozen (both work well)*
  • 2 Tbsp light brown sugar
  • 2 Tbsp lemon juice
  • 2 tsp vanilla extract
  • 1 tsp almond extract
Topping
  • 3/4 cup all purpose flour we use wheat or white whole wheat
  • 1/2 cup light brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • dash salt
  • 3/4 cup rolled oats
  • 5 Tbsp cold butter, cubed

Method
 

  1. Grease slow cooker with cooking spray.
  2. Toss together: peaches, brown sugar, lemon, vanilla and almond extract.
  3. Spread even in the bottom of the slow cooker
  4. Mix together: flour, brown sugar, baking powder, baking soda, cinnamon, and salt. Add in oats. Cut in butter until mixture is crumbly.
  5. Sprinkle mixture over peaches.
  6. Cover and cook on low for 3-4 hours, until peaches are tender.

Notes

* If using frozen peaches, make sure they are thawed before adding to the recipe.

  1. fruit crisps are one of my favorite desserts. I love them with custard. Vanilla ice cream works too. Cooking it in the slow cooker is interesting. I have never tried that.

  2. I normally don’t use my slow cooker in the warmer months, but using a summer fruit like peaches is going to get me to change my philosophy. This sounds so good, I can’t wait to try it out!
