Easy Homemade St. Patrick’s Day Cake Pops Recipe

Spring is my favorite time of year. I seriously look forward to the days getting longer, the temperatures warming up, and – my favorite – the flowers popping up out of the ground!
I’ve always considered March to be a fun month – probably because I’ve always associated it with spring break, St. Patrick’s Day, and my mom’s birthday 🎉
This year, I’ve been feeling inspired to make fun (and EASY) holiday goodies that the entire family can enjoy. I tried my hand at Valentine’s Day cake pops, which were a huge HIT at home and at my son’s classroom party.
Now I’m sharing some St. Patrick’s Day cake pops that are super fun to make – and eat! They’re copycat Starbucks cake pops because, well, why spend gobs of money on them when you can make them easily?
How To Make St. Patrick’s Day Cake Pops
These green cake pops are simply green cake balls on lollipop sticks to make the perfect treat for St. Patrick’s Day!
Ingredients Needed
Here’s what you’ll need for this easy cake pop recipe. Grab the printable recipe card at the bottom of this post for exact amounts!
- White cake (such as a boxed cake mix) – bake your favorite box cake brand according to package directions. You can make it in any cake pan.
- Cream cheese frosting – soften before using.
- Green candy melts – or white candy melts and dye them green (but buying them green is easier)
- 6″ cake pop sticks – these are the perfect size not only for this project but for a lot of fun projects!
- Gold coins – the kids LOVE these because they look like gold!
- White sprinkles – these are the little “dot” sprinkles because I like how they look on the cake pops, but you can use regular white sprinkles if you prefer.
How To Make St. Patrick’s Day Cake Pops
- Bake according to package directions – Let the cake cool then, in a large bowl, crumble it into cake crumbs.
- Add in your cream cheese frosting – Mix it into your crumbled cake with a hand mixer, spoon, food processor, or stand mixer until you get a dough-like consistency.
- Divide your cake into 10 sections – With the palm of your hand, round out each portion into a ball shape. You may find a cookie scoop helpful for this.
- Freeze the cake balls – Place your cake pops on a sheet pan or plate, and freeze them for 15 minutes.
- Melt green candy melts – While your cake pops are in the freezer, place the candy melts in a medium-sized bowl. Microwave for 30-second intervals until completely melted.
- Remove the cake pops from the freezer.
- Insert the lollipop sticks – Dip a cookie stick into the candy melt, then insert the end of the stick into the cake pop. Dip your cake pop in the melted candy melts and coat completely. Pull it out and tap it gently on the side of the bowl to remove any excess chocolate from the cake pop to create a smooth finish.
- Decorate your St. Patrick’s Day cake pop – Place the cake pop on the parchment paper. Immediately add your festive sprinkles before the chocolate dries. In the corner of your cake pop, push in your gold coin.
- Continue steps #7 and #8 until all of the cake pops are complete.
- Enjoy!

St. Patrick’s Day Cake Pops Variations To Try
If you want to change things up a bit, here are some easy ways to do that!
- Cake mix – Use your favorite cake mix or make your favorite homemade cake recipe!
- Different flavor of cake – Instead of vanilla cake mix, try a chocolate cake mix for decadent chocolate cake pops or a birthday cake mix with colorful sprinkles inside for a rainbow version!
- Change the frosting – chocolate frosting is ideal when using chocolate cake mix.
- Vary the flavor combinations – You could make vanilla cake pops with chocolate candy melts (and green sprinkles), chocolate cake pops with white chocolate chips for the coating (plus green and gold sprinkles), etc!
- Change the decorations – A special St. Patrick’s sprinkle mix or even edible glitter would be super cute and festive!

St. Patrick's Day Homemade Copycat Starbucks Cake Pops
These beautiful green copycat Starbucks cake pops are the perfect St. Patrick's Day treat. They're easy to make and will definitely bring the luck of the Irish to you!
Ingredients
- 1⁄4 white cake (such as a box cake), cooked
- 2 TBSP cream cheese frosting, soft
- 8 oz candy melts, green
- 10 count 6" cookie sticks
- 10 gold coins
- 3 TBSP white sprinkles
Instructions
- In a large bowl, crumble your baked cake.
- Add in your cream cheese frosting. Mix well.
- Divide your cake into 10 equal sections. With the palm of your hand, round out each portion into a ball shape.
- Place your cake pops on a sheet pan or plate, and place them in the freezer for 15 minutes.
- While your cake pops are in the freezer, place all of your candy melts in a medium-sized bowl. Microwave for 30-second intervals until completely melted, stirring in between each interval.
- Remove the cake pops from the freezer.
- Place your cookie stick in the candy melt, then the cake pop. Then dip your cake pop into the candy melts. Coat the pop completely with the melt. On the side of the bowl, tap it gently with the stick removing any excess chocolate from the cake pop to create a smooth finish.
- Place the cake pop on the parchment paper. Immediately add your sprinkles before the chocolate dries. In the corner of your cake pop, push in your gold coin.
- Continue steps 6–8 until each cake pop is complete.
