How To Make Chicken Broccoli Lasagna (Easy Alfredo!)

Chicken and Broccoli Lasagna is a healthy twist on a traditional favorite comforting meal that the whole family will love. Layers of pasta filled with tender chicken, nutritious broccoli, and a simple alfredo sauce will delight the taste buds with creamy, cheesy goodness. I don’t know about you, but I’m always working to get more veggies into our diet. The catch is that it needs to happen in a way that’s super delicious (picky kids and all!).

I’ve found ways to add veggies to traditional lasagna, but I wanted to create an alternative for variety. I’m thrilled to say that after lots of experimentation, I have a delicious alternative to traditional lasagna with red sauce (like this Easy Crock Pot Lasagna)!

This dish consists of thick layers of noodles, broccoli, and chicken baked in an easy homemade creamy white sauce! 

Plus, it’s great for meal prepping because you can throw it together the day before and bake it the next day.

Chicken Broccoli Lasagna Ingredients

Instead of using ricotta cheese in this recipe, you’ll make a simple (and delicious) alfredo sauce. Trust me, it’s easy!

  • Butter
  • Flour
  • Milk
  • Chicken broth
  • Eggs
  • Parmesan cheese
  • Seasonings – salt, nutmeg, cayenne, parsley
  • Onion
  • Garlic
  • Chicken breasts – cooked & diced (pre-cooked rotisserie chicken works great to save time!)
  • Broccoli florets – fresh or frozen (and thawed)
  • Carrots – shredded
  • Lasagna noodles – cooked & drained

How To Make Chicken And Broccoli Lasagna

Here are some quick visual instructions.

Step 1 – Preheat Oven

Preheat oven to 350 degrees.

Step 2 -Make Homemade Alfredo

Melt 3 tablespoons butter in a medium saucepan and whisk in flour. Then add milk & broth.

Bring to a boil, whisk ½ into beaten eggs (to temper the eggs), then return all to the pan.

Step 3 – Add Cheese And Seasonings

Remove from heat and add in ½ of the parmesan cheese, salt, nutmeg, and cayenne (if using), then set aside.

Step 4 – Sauté Onion And Garlic

In a large skillet, sauté onion and garlic in the remaining butter (or a little olive oil).

Step 5 – Add Other Main Ingredients

Add the cooked chicken, broccoli, carrots, and parsley and cook for 3 minutes to soften them.

Step 6 – Prepare The Pan

Spread ½ the parmesan mixture in a greased 13×9 baking dish or casserole dish.

Step 8 – Layer Your Lasagna

Layer noodles, chicken-broccoli mixture, creamy cheese sauce, and parmesan cheese into chicken and broccoli lasagna.

Repeat the layers until all the ingredients are used.

Step 9 – Bake!

Bake for 40-45 minutes

  • Use Leftover Chicken – If you don’t want to take the time to cook chicken, use a store-bought rotisserie chicken or leftover chicken to save time!
  • Fill Each Layer Fully – As you assemble your layers, try to completely cover the layer underneath so you get good layers with every delicious morsel in each bite!
  • Cover To Bake Then Uncover To Brown – Try saving time by baking this covered for the first 35 minutes. Then uncover and add cheese to let it melt and brown.
  • Try oven-ready lasagna noodles – Save time by using oven-ready noodles instead of taking the time to boil noodles.

Chicken And Broccoli Lasagna Recipe Variations To Try

  • If you don’t want to cook your lasagna noodles, try using oven-ready noodles. Time saver!
  • Would you rather use a couple of jars of white Alfredo sauce? Do it!
  • If you want to cut calories more, skip the creamy alfredo sauce and blend a container of ricotta cheese with 1/2 cup sour cream and 1 cup cottage cheese.
  • Sometimes I add some frozen riced cauliflower (about 1/2 cup) for an additional (and tasteless) boost of nutrition.
  • Make it cheesier by adding mozzarella cheese or Italian cheese blend to the layers (or on top of your broccoli lasagne).
  • Diced fresh mushrooms would be a delicious addition!
  • Other great veggie ideas include squash, zucchini, and bell peppers.
  • Want to change the protein? Try turkey, ground beef, or ham.

Can you use frozen broccoli?

Yes! It can make your lasagna a little runnier. If you don’t like that, you have two options: use fresh broccoli OR gently strain your frozen broccoli to get rid of the excess liquid.

What can I serve with chicken lasagna?

This dish can be a complete meal thanks to the inclusion of protein, veggies, and carbs! However, you could add some sliced bread, a salad, or a smoothie to get some fruit!

How long does chicken broccoli lasagna stay fresh?

Store it in an airtight container in the fridge for up to 5 days.

Can I freeze broccoli chicken lasagna?

Yes! However, I do recommend assembling this lasagna (leaving off the top layer of cheese) and freezing it before you bake it.

Assemble it in a freezer-safe dish (or discardable aluminum pan) and cover it with a layer of plastic wrap and a layer of aluminum foil. It will stay fresh in the freezer for up to 3 months. Then, when you’re ready to bake, remove it from the freezer, let it thaw in the fridge overnight, and bake it according to the recipe instructions.

  • ¼ cup flour
  • 2 cups milk
  • 1 cup chicken broth
  • 3 eggs, beaten
  • ¾ cup parmesan cheese
  • 1 teaspoon salt
  • Pinch nutmeg
  • Pinch cayenne (optional)
  • 1 cup onion, chopped
  • 1 clove garlic, minced
  • 2 cups chicken, cooked & diced
  • 1 package frozen broccoli, thawed & drained
  • ½ cup carrots, shredded
  • ¼ cup parsley
  • 15 lasagna noodles, cooked & drained

Instructions
