Ice Cream Cakesicles: Perfect Party Treat

Cakesicles are a fun new take on the classic cake pop. They’re easy-to-make, delicious, and SO festive that they’ll thrill kids and adults alike!

Have you ever had or made cake pops before? They’re a staple at Starbucks, and have taken the internet by storm because they are actually SUPER easy to make (and enjoy without forking over $3+ per pop 😂).

Well, here’s a new, fun twist on the ever-popular cake pop treat that’s made to look like ice cream popsicles! Say hello to “cakesicles”! 

It may look different, but the basic idea is the same: a chocolate shell around a doughy, delicious blend of cake and frosting. It’s bigger. It’s bolder. But it’s just as delicious!

Whether or not you’ve ever made cake pops before, I promise that making cakesicles is really easy – even busy moms can make this one happen!

What is the difference between Cake Pops and Cakesicles?

The difference is simple…..a cake pop is made by rolling a mixture of cake and frosting into a ball or other desired shape.

It’s then dipped in chocolate or candy melts, and when it sets up, it looks much like a tootsie pop.

A cakesicle, on the other hand, is simply a cake pop in a larger form and looks like a popsicle. Because of the different size and shape, the process is a little different.

Cakesicles are made by painting the chocolate or candy melts in a popsicle mold and then filling the painted mold with the cake dough mixture.

Ingredients Needed For Cakesicles

Here’s what you’ll need in order to make these super cute and delish cakesicles:

  • Cake pop dough – crumbled cake and frosting mixed together = the cake pop dough.
  • Colored Candy Melts – candy melts are also known as confectionery coating which once melted is perfect for decorating.
  • Almond barkchocolate-like confection made with vegetable fats instead of cocoa butter.
  • Parchment-lined baking sheets – provides a non-stick surface to place the cakesicles on.
  • Piping bags – cone-shaped bags used for decorating.
  • Microwave-safe bowls w/lids 
  • Ice cream silicone molds – silicone molds are easy to work with and come in lots of super fun shapes.
  • Popsicle sticks – make sure they are safe to use with food and not craft sticks that are not food grade.

How To Make Cakesicles

Just follow these step-by-step instructions and you will have some incredible-looking popsicle-shaped cake pops to thrill all your guests – especially your kiddos!

Cakesicles Start With Cake Pop Dough

Ok, let’s get started!!! 😁

First, you’ll bake your cake. Remember a cake mix will work just fine unless you want to make one from scratch. Use a 9×13 inch pan or a couple 8 inch round pans.

NOTE: Leave out the oil but use the other ingredients listed on the box.

Once the cake is baked and cooled, crumble the cake into a bowl. Add 1/3 cup frosting.

Use your hands to mix it all together. Add a bit more frosting if you want a little doughier dough. (You can add up to an entire 16 oz container if you really want to.)

Create A White Chocolate Shell

Are you ready to have some fun with chocolate? 😉

First, you will need to fully melt the almond bark or melting wafers. If you are using melting wafers, you may have to add a little vegetable oil to make the chocolate smoother.

Next, spoon the melted chocolate into the first cakesicle mold. Make sure the mold is fully covered and take special care to coat all the way to the rim (check the pictures and video below)

IMPORTANT: If you have not used your molds before, press a stick through the hole where your handle/stick will go to remove the cut-out.

Note: we are not FILLING the cavity with chocolate. We simply want to create a chocolate shell. We will fill it with cake pop dough.

Fill Your Cakesicles

Now, you are going to use a spoon or food-safe paintbrush to spread the chocolate up the sides of the mold and insert the stick. The stick should NOT lean into the chocolate.

Wipe off any excess chocolate on the mold and put it in the freezer.

Press the cake pop dough into the cakesicles mold carefully so you do not break the chocolate and slide the stick into the dough to hold securely. Make sure the sticks are all the same length sticking out of the mold.

Cover the top with chocolate and return it to the freezer.

Remove Cakesicles From The Mold

Now, this part might be a little tricky but I know you can do it. 😁

Carefully loosen one of the end pieces. Peel the mold from the top gently until the entire pop is free of the mold.

If any of the chocolate breaks off, just repaint it and let it dry. Carefully remove any excess chocolate that remains.

Place the pops on a parchment-lined baking sheet.

Decorating The Cakesicles

Here comes the fun and creative part of the recipe!!!

Melt the colored candy melts in separate bowls or piping bags for each color you wish to use. (If you melted the chocolate in a bowl, you will need to transfer the chocolate into a piping bag at this point.)

Cut a small opening at the bottom of each piping bag and get busy with your creations!!! Don’t forget to add the sprinkles before the chocolate dries.

Recipe Tips and Troubleshooting

  • If the stick won’t stay inside the dough, remove it from the mold, dip in melted chocolate and insert into pop. Let it set for 10-15 mins.
  • If the chocolate cracks when removing, peel the chocolate off. If no cake is in the chocolate, re-melt it and start over.
  • You notice the sides are not fully covered, add/paint a bit of the melted chocolate into the exposed areas and let it dry.
  • If there’s extra chocolate on the outer rim, use a pair of clean scissors or a paring knife to carefully trim it off.

Possible Variations For Cakesicles

Here are some fun ideas for adding variety to your cakesicles. Have fun making them your own!

NOTE: You can use this same technique using milk chocolate or dark chocolate cakesicles too. For this specific tutorial, however, I am using white chocolate or white chocolate melts.

OR get really fancy and play around with swirling different varieties together!

My brain is on overdrive right now thinking of all the fun possibilities:

  • red, white, and blue cakesicles for the 4th of July
  • pink or blue for a baby shower or gender reveal party
  • orange and black for the Halloween party at school
  • red and green for Christmas cakesicles
  • and so much MORE!

Simply use different colored candy melts to change things up.

Your cakesicles will look marvelous with just one color, but no harm in jazzing it up a bit with another color and/or sprinkles.

Or, just drizzle some chocolate or colored candy melts for a more festive party feel.

No matter how you decorate them, I KNOW they’ll look fabulous (and taste just as good)!

Cakesicles FAQs

Here are some common questions I see from readers about this recipe – and their answers. If you don’t see your question below, please leave it in the comments so I can answer it!

How long will cakesicles stay fresh?

These cakesicles should last up to 7-10 days if the cake was fresh when you made them. You might want to make sure to consume them or share them with friends within 3-5 days if you used fresh frosting made with butter.

SAFETY NOTE: The cake filling may develop mold on the inside if kept longer than suggested. But you won’t be able to see the mold until you bite into the cakesicle. Ewwwwww 🤢

Can cakesicles be refrigerated or frozen?

Yes, they can but keep in mind that the chocolate shell will collect moisture from the fridge and can become wet or sticky.

If you choose to store them in the refrigerator or freezer, you will need to wrap each cakesicle very well in plastic wrap and then place them in a resealable plastic bag.

I also recommend putting them in a cardboard shipping box to keep most of the moisture out.

When removing from the freezer to thaw your cakesicles, take them out of the box and plastic bag. Leave them wrapped in plastic wrap for at least an hour to allow them to return to room temperature. This helps to keep them from cracking during the thawing process.

Allow the cakesicles to sit, unopened for at least one hour to allow the cake pops to come to room temperature.

Now remove plastic wrap and enjoy!

Will cake pops stay fresh longer if refrigerated?

Absolutely! They will keep for up to 2 weeks in the fridge and 3 months in the freezer with the recommended storage suggestions.

How do you make colored cakesicles?

For this tutorial, I used white chocolate for the base but decorated it with candy melts of a different color making it look like melting ice cream. And you can’t forget the sprinkles. 😍

Think of the fun options you can make with this recipe. If colored candy melts are not available to you, just add food coloring to the white chocolate to make it ANY color you desire.

How do I decorate my cakesicles?

There are plenty of ways to create festive-looking cakesicles including drizzling chocolate or different colored candy melts over the top.

You can even add sprinkles, candy confetti, crushed cereal (i.e. fruity pebbles), or chopped-up candy bars. Just make sure you add the toppings before the chocolate dries.

The sky’s the limit when it comes to decorations, and I bet your kids would love to help create as well.

Ice Cream Cakesicles

Cake pops in a popsicle shape - it's bigger and bolder, and even better than cake pops! Perfect for birthdays, parties, or any day!

Ingredients

  • 1 box white cake mix
  • 16 oz container white frosting

White Chocolate Shell and Decorations

  • Colored candy melts or almond bark
  • Ice cream shaped silicone molds
  • Popsicle Sticks
  • Piping bags and/or microwave safe mixing bowls
  • Food safe paintbrush
  • Parchment paper

Instructions

Cake Pop Dough

  1. Prepare the cake mix as directed on the box leaving out the oil, and bake as directed. Let cake cool completely.
  2. Crumble the cake into a bowl.
  3. Add 1/3 cup frosting to the crumbled cake and mix together with your hands to blend it all together well.
  4. Add more frosting if desired. Use as much as the full 16 oz container if needed.


Preparing the Ice Cream Mold

  1. Melt the candy melts or almond bark completely. Add a couple of drops of vegetable oil if using melts to make chocolate smoother.
  2. Spoon 1 tbsp melted chocolate or almond bark into one cavity of the popsicle mold.
  3. Using the paintbrush or spoon, brush the chocolate up the sides of the mold until chocolate cover the entire cavity.
  4. Before the chocolate dries in the cavity, insert a popsicle stick and remove it immediately. This will ensure the space is clear to insert the stick when ready.
  5. Repeat this process for the remaining cavities in the mold.
  6. Place the mold in the refrigerator or freezer and let chill for 3 - 5 minutes or until hardened.
  7. Remove mold from the fridge and allow to sit at room temperature for about 10 minutes.
  8. Paint a second later of melted chocolate just around the top edges of each popsicle cavity. Chill for approximately 2 - 3 minutes until hardened.

Filling the Cakesicles

  1. Take approximately 1 tbsp or cake ball filling and gently press into the candy shell making sure not to press too hard and break the hardened chocolate.
  2. Leave approximately 1/16 of an inch at the top of the mold to add more melted chocolate. Be sure the cake ball filling is touching the candy shell completely.
  3. Insert a popsicle stick into the cake filling through the hole at the end of the mold.
  4. Spoon about 1 tsp of white chocolate over the cake filling and spread into a thin layer. Scrape off any excess chocolate using an offset metal spatula for a smoother, flat surface.
  5. Put cakesicles into fridge or freezer for 3 - 5 minutes or until chocolate hardens.

Unmolding the Cakesicles

  1. Gently press the pops out of the silicone mold.
  2. Place the cakesicles on a baking sheet lined with parchment paper.
  3. Use a sharp, thin knife to remove excess chocolate around the outer edges of cakesicle once they reach room temperature. The excess pieces will stick to the outer shell if it is still cold.

Decorating the Cakesicles

  1. Melt colored candy melts in microwave-safe bowls or directly inside a piping bag.
  2. Microwave in 30-second increments until the melts are smooth and completely melted.
  3. Cut a small opening at the bottom of the piping bag and begin creating and decorating.
  4. Add sprinkles to decorated areas, if desired, before the chocolate dries so that the sprinkles will stick.
  5. Let dry for approximately 15 minutes before serving.
