Instant Pot Bacon Egg Bites (Easy Starbucks Copycat)

If you love Starbucks’ delicious sous vide egg bites, you’ll love these creamy and fluffy homemade Instant Pot bacon egg bites! These satisfying eggs are made with only 5 ingredients, are packed with cheesy bacon flavor, and provide a fantastic easy make-ahead breakfast for busy mornings.

Breakfast in our house can vary greatly from calm and efficient to chaotic and stressful. Sure, sometimes we oversleep or don’t sleep well and are short on time. But the biggest difference between the two types of mornings is whether or not breakfast is ready to go when my boys are.

It can take some work to drag my teenage boys out of bed for school, but they always wake up hungry and ready to eat.

And since it’s a long time between the time they eat breakfast and their lunch periods (6+ hours!), I want to fill them up. That means protein.

When the Instant Pot took off in popularity, I was highly skeptical of the machine that claimed to be a 5-in-1 of a 7-in-1 or even a 9-in-1. I spent some time observing how others used it.

I admit – sometimes it takes me a while to jump on the train – any train! As usual, I’ve been slow to catch on to the Instant Pot craze.

Although I’m still learning the ins and outs of this incredible machine, I’m convinced of its awesomeness.

I knew I had to start figuring out what I could do with my Instant Pot by perfecting Starbucks’ egg bites.

The trick involves using a silicone egg mold insert. Voila! I’ve figured it out! Follow these directions and in no time you’ll have the most incredible, homemade egg bites (and easy breakfast with WAY more protein than your kiddo’s favorite cereal) you can imagine.

All you need are a handful of simple ingredients to make this low carb, healthy breakfast idea! 

  • Eggs
  • Cottage Cheese
  • Shredded Cheese – I used Monterey Jack Cheese and Gruyere cheese
  • Bacon – cooked and chopped
  • Salt and Pepper, to taste

How To Make Instant Pot Bacon Egg Bites

Follow these simple instructions, and you’ll have tasty bacon gruyere egg bites ready in under 25 minutes.

Step 1 – Prepare Your Instant Pot

Pour 2 cups of water into your Instant Pot and set the metal trivet inside.

Step 2 – Blend Eggs And Cottage Cheese

Place the eggs and cottage cheese in a small blender and puree until combined and no large chunks of cottage cheese remain.

Step 3 – Add Other Ingredients

Stir in the cheeses, crumbled bacon, and seasonings until well-incorporated.

Step 4 – Fill The Silicone Tray

Grease a silicone muffin tray or egg bite tray with nonstick spray and sprinkle a bit of Monterey jack into each cavity.

Pour egg mixture into each special egg bite mold cavity until they are almost all the way full.

Step 5 – Cook Your Instant Pot Bacon Egg Bites

Carefully place the egg-filled tray on top of the Instant Pot trivet.

Secure the lid of the Instant Pot lid and set to Manual for 10 minutes.

Natural release.

Let your copycat Starbucks sous vide egg bites cool for a few minutes, and they’re ready to eat and enjoy!

Instant Pot Egg Bites Recipe Variations To Try

Here are some ideas to change things up if you want to add variety to your copycat Starbucks egg bites!

Cheese – Try using your favorite melty cheese. Cheddar cheese, gouda, or parmesan cheese would be delicious!

Meat – Instead of bacon (or bacon bits to save time), try small diced ham, sausage, chorizo, or your favorite meat.

Veggies – Yep, you can totally add finely diced veggies! Try fresh spinach, sun-dried tomatoes, bell pepper, green onions, or even green chiles!

Egg Whites Only – Reduce calories by using egg whites instead of whole eggs.

Transform your favorite omelet, egg scramble, or quiche into delicious little portable egg bites!

Oven Cooking Method

  • Preheat Oven and Water – Place the silicone egg bite molds in an oven-safe baking dish and fill with the hot water until it comes halfway up the sides of the mold. Take the mold out of the water and put the water-filled baking dish on the center rack of the oven. Preheat the oven to 300 degrees F. This will allow the water to warm up as the oven does so the egg bites cook correctly.
  • Prepare your eggs as instructed above.
  • Bake eggs in their silicone mold – Carefully open the oven and place the egg bites in the center of the baking dish of water. Bake uncovered until the egg bites set – about 35-45 minutes.
  • Remove from oven – Carefully remove from the oven and use two pairs of tongs to lift the egg mold from the baking dish and water bath. Let cool, uncovered, for 10 minutes.
  • Remove egg bites from mold – Use a butter knife (or silicone spatula) to loosen around the edges of the egg bites inside the silicone. Next, flip the silicone mold upside down over a cutting board or plate to remove the egg bites.

NOTE: If you use this oven method, your egg bites will turn out a little more like my Bacon, Spinach & Potato Frittata Muffins.

How To Store Pressure Cooker Egg Bites

Let cool completely and store in an airtight container in the fridge for up to 5 days.

How To Reheat

These Instant Pot bacon egg bites reheat really well! To reheat, I just pop one egg bite into the microwave for 30-45 seconds until warm. You could also put them into a toaster oven for about 5 minutes.
