Easy Strawberry Stuffed French Toast Recipe

As a parent, I work hard to figure out how to get more fruits and vegetables into my kids’ diets.

A quick bowl of cereal is ok once in a while, but most days, I like to make a healthy breakfast for my kids to give them fuel to concentrate and get through their busy days.

You guys, this strawberry stuffed French toast recipe is so easy, and your whole family (not just the kids) will LOVE it. It’s filling, delicious, AND just sweet enough to satisfy that sweet tooth.

In fact, it’s just special enough that I tend to make it for my kids for special occasions: first day of school, last day of school, holidays (like Christmas or Valentine’s Day), etc.

Ingredients Needed

A few simple ingredients are all you need to create a final product that’s divine.

  • Granulated Sugar
  • Cinnamon
  • Mascarpone Cheese – similar to cream cheese but richer because it is made with whole cream instead of milk
  • Bread – sandwich slices are the perfect size to roll out
  • Strawberries – fresh, sliced strawberries are the best option for this recipe
  • Large Eggs
  • Milk – 1%, 2% or whole milk are all great options
  • Vanilla extract – adds a distinct, sweet, caramel-like flavor 
  • Nutmeg – nutty, sweet flavor which pairs well with fruit dishes

How to Make Strawberry Stuffed French Toast

French toast was always one of those things that seemed too complicated to make myself. Forget about stuffed French toast. Then I experimented with this recipe and fell. in. love.

Step 1 – Mix Batter

Whisk together the batter ingredients (eggs, milk, vanilla, sugars, nutmeg) in a large bowl and set aside. 

Step 2 – Prepare Bread

Cut the crust off the bread and flatten it with a rolling pin.

Step 3 – Spread Cheese On Bread

Spread cheese thinly on the bread and layer slices of strawberries on the bread slices.

Step 4 – Roll Up

Roll up each slice of bread and pinch the ends of the bread together.

Step 5 – Coat French Toast Rolls In Egg Mixture

Dip in the French toast batter.

Continue the same process with every piece of bread.

Step 6 – Cook Strawberry Stuffed French Toast Rolls

Melt butter in a hot skillet or griddle over medium heat.

Strawberry Stuffed French Toast Expert Notes And Tips

  • Best bread to use – Brioche bread, Challah bread, and Texas Toast will work well for this recipe. You will need to find the type of bread that rolls up well.
  • If you are making a double batch or larger of the Strawberry Stuffed French Toast, preheat the oven to 200 degrees and use a parchment-lined baking sheet to place the cooked pieces in the oven to keep warm.
  • Watch your French toast carefully as you cook each side to a golden brown and crispy – avoid burning it. It might take a couple of tries to get the skillet/griddle to the perfect temperature.

Variations To Try

  • Try adding Nutella in place of (or in addition to) the mascarpone cheese for a chocolate-covered strawberry flavor.
  • Cream cheese – replace the mascarpone cheese with a sweet cream cheese filling, softened cream cheese, or even strawberry cream cheese.
  • For a touch of brightness, add some lemon zest to the cheese filling.
  • Fresh Berries – if you want to change things up, I like replacing the strawberries with a mix of fresh berries.
  • Dust lightly with powdered sugar or cinnamon sugar.
  • Favorite Toppings – Top with some fresh strawberries, strawberry jam, strawberry syrup, or maple syrup.
  • Add a couple dollops of whipped cream on the top of this French toast. YUM!

How To Store Strawberry Stuffed French Toast

If you have leftovers (and that’s a big “if”), store them in an airtight container in the refrigerator. They will stay fresh in the fridge for 1 – 2 days. After about 2 days, the bread may begin to get a little too mushy.

To reheat, just place 1 – 2 pieces of French toast on a microwave-safe dish and heat for 30 seconds.

Freezing Instructions: I would not recommend freezing Strawberry Stuffed French Toast. When the mascarpone cheese thaws, the liquid will separate from the solid. Also, the strawberries have moisture in them, which will cause the bread to become mushy and soggy.

Is my Strawberry Stuffed French Toast going to be gooey and creamy in the center?

Yes! The mascarpone cheese mixture is going to make the center of your stuffed French toast creamy, sweet, and delicious. The fresh fruit is an added bonus!

How should the outside of the French toast be cooked?

Ideally, the outside of your Strawberry Stuffed French toast should be golden brown and crispy on the outside. Cook for 2-3 minutes on each side before flipping. It should not be soggy or dry on the outside after cooking.

Should my griddle or skillet be pre-heated to high, medium or low?

You will want to pre-heat your skillet or griddle to medium or medium-low. This will ensure that the center will cook and the outside will be golden brown and caramelized.

Can I use olive oil instead of butter to cook my French toast?

Nothing is the same as the buttery flavor that melted butter delivers.

However, for a healthier option, I would suggest using light olive oil, which has a neutral flavor and will not impart an olive flavor to your French toast. You could also use canola oil, avocado oil, or coconut oil (if you don’t mind adding a mild coconut flavor to your French toast!).

Ingredients

  • 1/2 cup granulated sugar + 2 tbsp cinnamon (mixed)
  • 1 - 2 tbsp mascarpone cheese
  • 6 - 8 slices of bread
  • Strawberries, sliced

Batter

  • 3 eggs
  • 1/4 cup milk
  • 2 tsp vanilla
  • 1 tbsp granulated sugar
  • 2 tsp cinnamon
  • 1 tsp nutmeg

Instructions

  1. In a large bowl, whisk the batter ingredients together and set aside.
  2. Cut the bread crust off with a knife and then flatten the bread with a rolling pin.
  3. In a thin layer, spread mascarpone cheese on bread.
  4. Layer the sliced strawberries on the bread.
  5. Roll the bread and pinch the ends together to close.
  6. . Dip rolled bread in french toast batter.
  7. Continue the same process with all of the rolls of bread.
  8. Melt butter in hot skillet or a griddle.
  9. Cook until golden brown on both sides.
