Chocolate-Covered Strawberry Christmas Trees

Easily transform strawberries into winter wonderland Christmas trees! These strawberry Christmas trees have an Oreo base, are covered in chocolate, and then decorated to make a festive snack (or dessert) that will be the hit of a party (or perfect DIY gift) and loved by both kids and adults!

I don’t even bother spending time making complicated or difficult treats. As a busy mom, I just don’t have the time.

That doesn’t mean that I don’t want to make festive holiday-themed treats, though!

They just have to be quick and easy. 😁

And they’re easy enough for busy moms to squeeze in as they prepare for any holiday event.

Now, I’m sharing another quick and easy recipe for busy moms: chocolate-covered strawberry Christmas trees!

Imagine fresh strawberries covered in a smooth candy coating then decorated with color sprinkles (and little stars if you want them) and put on top of a cookie base. Such a fun treat!

Strawberry Christmas Trees Ingredients

Here’s what you’ll need to make these adorable chocolate-covered Christmas tree treats!

  • Oreo cookies
  • Strawberries
  • White chocolate
  • Coconut oil
  • Green gel food coloring
  • Star & assorted holiday sprinkles

How To Make Chocolate-Covered Strawberry Trees

  1. Cut the tops off of the strawberries to form a flat surface for the tree base
  2. Melt the white chocolate with just a little coconut oil.
  3. Add gel coloring if desired and stir until smooth.
  4. Dip the strawberries in chocolate and plate on wax paper lined tray or plate.
  5. Immediately place star sprinkle on top of tree and decorate with additional sprinkles as desired.
  6. Place in refrigerator to set.
  7. Spoon a small dab of melted chocolate in the center of the cookie and place the strawberry tree on top.
  8. Set again in refrigerator.

Recipe Tips And Notes

  • Use a fork: I first tried using a toothpick when it dipped the strawberries into the candy melts, but they slipped off the toothpick very easily. Then I tried a fork and found that to be easier to work with. The extra holes don’t matter because you won’t be able to see them.
  • Add decorations quickly: The candy melts firm up quickly once you dip the strawberries into them. This happens even faster if the strawberries are cold. You need to add the sprinkles, tree topper, etc before the candy melts harden or they won’t stick. Do it quickly!

Tips For Melting Candy Melts

Candy melts can be heated in the microwave but it must be done slowly or they can seize up. Heat in a microwave-safe bowl in 15 to 30-second intervals, stirring well between. Do not overheat!

If your candy melts seize up, try adding a few drops of vegetable oil to the candy melts to help thin them out to the desired consistency.  

Whatever you do, make sure no water gets into the candy melts. This is important because they’ll seize up, and you will have to start all over again with a new package of melts.

Strawberry Christmas Trees Variations To Try

Change the cookies: I love using Oreos for this because they seem like the perfect size. However, you could use any cookie as the base of these little Christmas trees. Try gingersnaps, sugar cookies, or any other cookie you love!

Change the colors: Given that we’re making “trees,” green is the color of choice. However, feel free to have fun with this recipe and make different colors!

Sprinkle fun: Try using any type of festive sprinkles you want to use. They can be traditional or shaped!

Add the effect of snow: Want to make your “tree” look like it’s surrounded by snow? Cover the Oreo cookie with powdered sugar and then add the strawberry tree in its place.

Let The Kids Make Strawberry Christmas Trees

I love finding ways to bring my kids into the kitchen. I avoided that for a long time because I was worried about them getting hurt and it felt like such a hassle.

But, I wanted them to learn how to do things for themselves in the kitchen – AND that food doesn’t just appear. It takes time and effort to prepare food.

So, I’ve worked to bring them into the kitchen more and let them learn how to make food. And festive little projects like these are a GREAT way to let the kids prepare food.

How do I store these Chocolate-Covered Strawberry Christmas Trees?

For an optimum experience, eat your strawberry tree cookies the same day you make them because they really won’t stay fresh long.

Unless the strawberries are completely coated in candy, the juice from the berries will eventually seep down into the cookie and make it soggy.  

Can I reheat the candy melts if they start to harden?

Yes! You can reheat the candy melts as much as you need to so that it stays runny enough to dip your strawberries into.
