I can never second guess my kids and their food choices. LOL Now, they love Mexican cuisine, especially chips, salsa, and guacamole. And they also love burgers and fries.
But maybe not combined together? Surprisingly…yes!
These Fajita Burgers are the ultimate union of fajitas and burgers. A mouthwatering twist adding sauteed veggies and toppings done just your way.

Ingredients Needed For Fajita Burgers
- Large Vidalia Onion – mild, sweet onion
- Red Pepper – sweet with a slight citrus flavor
- Yellow Pepper – similar to red peppers but less sweet and citrusy
- Lean Ground Beef – preferably 90% or 93% lean
- Chili Powder
- Smoked Paprika – mild, medium-hot, or hot
- Cumin – add a tasty hickory flavor
- Dried Oregano
- Garlic Powder
- Onion Powder
- Avocado – peeled and chopped
- Salsa Verde – has a tart, zesty and tangy flavor
- Olive Oil
- Toppings – cheddar cheese, chopped fresh cilantro, chopped tomatoes, chopped lettuce
How To Make Fajita Burgers
Step 1
Begin by thinly slicing the peppers and the onions.
Step 2
In a skillet, heat the olive oil over medium heat and add the onions and peppers and saute. Stir frequently until soft, and the peppers and onions are caramelized.
Step 3
While cooking the peppers and onions, you can also mix the meat and spices in a bowl, kneading them together to mix well.
Step 4
Now, separate the meat and spice mixture into 4 burgers. Set to the side.
Step 5
Once the onions and peppers are done, remove the mixture from the pan. Place the same skillet back on the burner on medium heat.
It is important that you do NOT wipe out the skillet. Place the burgers into the skillet.
Step 6
Cook burgers over medium-high heat. Cook until you reach the desired level of doneness for your burgers.
For medium-well burgers, that would be about 5 – 6 minutes per side.
Step 7
As the burgers are cooking, pour salsa verde into a medium-sized mixing bowl.
Step 8
Peel and chop the avocado and add to the salsa bowl. Mix and mash until blended well.
Step 9
Place the burgers on a bun and top with avocado mixture and/or any other desired toppings.
Fajita Burgers Recipe Notes And Tips
- Ground chicken or turkey are great options instead of beef.
- When cooking the burgers, you want the burgers to be juicy, so they need a little fat in them. I would use 93% lean ground beef. If you are using ground chicken, do not use the 99% lean, or it will be too dry and crumble apart.
- Mix the spices together in a bowl before adding the ground meat. This will ensure that the spices a well mixed, and it will be easier to evenly mix everything together without over-mixing.
Variations Of Fajita Burgers To Try
- Toast the buns with a little butter for some extra yummy flavor.
- Choose the type of bun that you love the most such as plain, sesame seed, ciabatta, pretzel, or even a lettuce wrap.
- Sour cream, aioli, or a dab of mayo would be delicious on this burger. Sour cream would be my preference. 😉
- Add all of the delicious toppings to a black bean burger or veggie burger for a vegetarian option.

Yes, you probably could unless you prefer all the ingredients to be hot and fresh when you assemble and serve the burgers. If I were serving these at a gathering or party, I would prefer to serve them freshly made.
To keep the avocado from turning brown, place plastic wrap on the surface of the avocado mixture. Keeping the air out prevents the avocado from turning brown.
I would recommend that you keep the burgers, veggies, and avocado mixture in separate containers. This is would be my preference, but you do what works best for you.
The leftovers will keep well for 3 – 4 days if kept in an air-tight container.
That’s a good question! I would not recommend freezing the vegetables, however, after mixing the spices with the burger meat, make up patties and freeze them uncooked. The next time you want to make these Fajita Burgers, all you have to do is pull the burgers out and thaw.
Or once the burgers are cooked, go ahead and freeze the patty. When you are ready to serve, thaw and simply reheat the burger before adding the toppings and veggies.

Ingredients
- 1 large Vidalia onion
- 1 red pepper
- 1 yellow pepper
- 1 lb lean ground beef
- 1 tsp chili owder
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 tsp dried oregano
- 2 tsp garlic powder
- 1 tsp onion powder
- 1 large avocado
- 1 Tbsp salsa verde
- 1 Tbsp olive oil
- Toppings if desired - cheddar cheese, chopped fresh cilantro, chopped tomatoes, chopped lettuce
Instructions
- Thinly slice peppers and onions. Heat olive oil in a skillet over medium heat. Add peppers and onions to the oil and sauté stirring frequently over med heat until soft and caramelized.
- While the peppers and onions are cooking, mix meat and spices in a medium size bowl kneading to mix well. Separate the meat mixture into 4 burgers and set aside.
- When the peppers and onions are cooked remove from pan. Place the pan back on medium heat (don’t wipe the pan) and place the burgers in the pan. Seer over medium high heat and cook until desired level of doneness (about 5-6 minutes per side over medium heat to cook to med/well)
- While the burgers are cooking place the salsa verde in a medium size bowl peel and chop the avocado and add it to the salsa. Mash and mix it until well blended.
- Serve the burgers topped with the avocado mixture and any other desired toppings!
